Building this restaurant taught us a big life lesson: you can’t out-plan life.
We tried—oh, we tried. Lists, spreadsheets, backups for the backups… and still, life kept throwing its famous plot twists at us.
But our mission was stronger: bring real Greek flavor to Amsterdam.
Not “inspired by Greece.” Not “kind of Greek.”
Real Greek.
And doing that far from home? Yep, that was the craziest challenge of all.
Now we’ve learned to laugh a little more, stress a little less, and go with the flow — Greek style.
