A creative twist on traditional puff-puff! Here's a recipe for making puff-puff with overripe plantains:
Ingredients:
- 3-4 overripe plantains, mashed
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/4 teaspoon active dry yeast
- 1/2 cup lukewarm water
- Vegetable oil for frying
- Optional: nutmeg, cinnamon, or other spices to taste
Method of Preparation:
1. *Proof the yeast*: In a small bowl, combine the lukewarm water and yeast. Stir to dissolve, then let it sit for 5-10 minutes until frothy.
2. *Combine dry ingredients*: In a large bowl, whisk together the flour, sugar, and salt.
3. *Add mashed plantains and yeast mixture*: Add the mashed plantains and yeast mixture to the dry ingredients. Mix until a smooth, thick batter forms.
4. *Knead the dough*: Knead the dough for 5-10 minutes until it becomes elastic and smooth.
5. *Rest the dough*: Cover the dough with a damp cloth and let it rest in a warm place for 1-2 hours, or until it has doubled in size.
6. *Punch down the dough*: Once the dough has risen, punch it down to release any air bubbles.
7. *Fry the puff-puff*: Heat vegetable oil in a deep frying pan over medium heat. Using a spoon, drop small balls of the dough into the oil, about the size of a golf ball. Fry until golden brown, about 3-5 minutes on each side.
8. *Drain excess oil*: Remove the puff-puff from the oil and place them on a paper towel-lined plate to drain excess oil.
9. *Serve warm*: Serve the puff-puff warm, sprinkled with sugar or spices to taste.
Tips:
- Use very ripe plantains for the best flavor.
- Don't overmix the dough, as it can become tough.
- If you want to add extra flavor, you can sprinkle the puff-puff with nutmeg, cinnamon, or other spices before frying.
- Puff-puff is best served fresh, but you can also store it in an airtight container at room temperature for up to 2 days. Simply reheat it in the oven or microwave before serving.
