Terra Mater by The Burgundy is a return to what has always been here.

The ingredients we overlooked.
The street foods that raised us.
The flavours we once called too local to be luxurious.

This menu moves along the thin line between abundance and waste, turning familiar produce into something thoughtful, refined, and deeply rooted.

It is our way of questioning old ideas about African food, while supporting the farmers, foragers, makers, markets, and memories that keep our ecosystem alive.

Because sustainability is not just about using less.
Sometimes, it is about looking again.

Terra Mater.
The familiar, reimagined.

Photographs hold stillness in the middle of chaos.

Small laughter. Quiet focus.
Unspoken understanding.
Intentionality. Teamwork.

Yesterday was one of those days that reminds you why you do this.

500 guests. Multiple courses. One service.

I’m incredibly proud of the team.
The level of focus, coordination, and calm under pressure was something to see. From the first plate to the last, we stayed locked in and delivered exactly what we set out to do.

Big thank you to the Eko Hotel team for the support and collaboration. It made a huge difference.

And to be honest, not everything went according to plan.
We had to adjust timings, rethink certain moments, and improvise on the fly.

But that’s part of it.

The real test is not when everything is perfect, it’s when it isn’t… and you still show up and execute at a high level.

That’s what I saw from the team.

And moments like this just reinforce something I’ve always believed…
Pan-African cuisine is not coming. It’s already here. ☕️🔥

Grateful. Proud. Ready for the next one.

D-Day.

It starts here…
tying the apron. Locking in.

Everything before this moment?
Long days. Longer nights. No off switch.

Now it’s precision.
Plate after plate. Detail after detail.

Hundreds of dishes. One standard.

No noise. Just work.

We’re live. 🔥

Stay with us.
