Egg roll recipe: this will give 20 pieces of eggrolls

Flour 1kg
Margarine 100g
Sugar 170g
Milk flavour 1tbsp
Water 3 to r cups
Baking powder 2tsp

Procedure

In a bowl, sieve in flour, add butter, salt and sugar, rub in the butter with your finger tips

Add in baking powder and mix together

Add flavour and water, gently mix in the water to get a slightly light dough

Cut a small handful of the dough, gotten the dough on your palm. Place an egg in the middle of the dough and gently use the dough to wrap up the egg

Make sure there's no tear as you wrap the egg

Heat up your vegetable hot and fry in medium heat until it's golden brown

PLANTAIN SWALLOW + VEGETABLE SOUP RECIPE (Step by Step Guide)

Ingredients
• Fresh vegetables (African spinach/green)
• Beef
• Ponmo (optional)
• Local red bell peppers (tatashe)
• Cayenne peppers (shombo)
• Scotch bonnet peppers (rodo)
• Onions
• Palm oil
• Stock fish
• Dried catfish
• Smoked panla fish
• Locust beans (iru)
• Seasoning cubes
• Crayfish powder
• Salt
• Unripe plantain

To Make the Vegetable soup (Efo Riro):

1. Cut and wash your beef or any protein of choice. Put it in a clean pot.

2. Season with salt, seasoning cubes, pepper and chopped onions. Mix well, cover and allow it to cook on low heat for about 15 minutes so it can release its own liquid.

3. After 15 minutes, add some water and continue cooking until the beef is cooked. Set aside.

4. In another pot, heat up some palm oil. Add chopped onions and locust beans. Fry for a few minutes to bring out the flavour.

5. Pour in your roughly blended pepper mix (tatashe, shombo, rodo and onions). Add seasoning cubes and let it fry till the raw taste is gone.

6. Add the precooked beef, along with washed, deboned stockfish flakes, dried catfish and smoked panla. Mix well, then add crayfish powder.

7. Pour in some meat stock to loosen the sauce, adjust your seasoning and salt, cover and allow it to cook until the oil begins to float on top.

8. Once the sauce is well cooked, add your vegetables (preferably blanched vegetables). Stir gently and allow it to simmer for just 2 minutes. Do not overcook your vegetables.
Efo riro is ready.

To Make Plantain Swallow:

1. Wash your unripe plantain very well before peeling so dirt doesn’t transfer to the inside.

2. Peel, cut into small pieces and blend with a little water until completely smooth.

3. Pour the blended mixture into a pot and stir continuously with a spatula until it starts to thicken and form.

4. Add a little water, cover and allow it to cook on low heat for 5 minutes.

Scotch Egg Recipe

Ingredients
Flour-3cups
Butter - 1/4cup
Sugar -1/4 cup
Eggs -7
G/oil
Baking powder - 1tbsp
Salt- pinch
Powder milk- 1/3cup
Bread
Biscuits

Method
-Sieve your flour
- Add in your dry ingredients into the sieve flour bowl( sugar, salt,baking powder,powder milk) Mix very well.
-Add your butter and mix.
-Add water gradually into the bowl and mix, your dough shouldn't be watery. Set aside
-Boil your egg
-Put your bread and biscuits in an oven for it to bake .(10mins
-Bring the bread and biscuits out of the oven mesh/pound it.( Your bread and biscuits should turn to crumbs).
-Pour the crumbs in a tray
-Put your oil on the fire allow to heat
-Peel your egg
- Wrap your dough with the peel egg
- Put the dough in the crumbs(biscuits/bread)tray make sure the dough is cover with it.
- Repeat this process until your egg is exhausted .
-Put the dough in the oil and fry(Deep frying)
- Scotch Egg is ready

weekend meals are more than food😋

AFANG SOUP RECIPE🥗

MAIN INGREDIENTS-

Afang/okazi leaf ( 3 bunches or more )
Water leaf ( 4 big bunches )
Meat ( of choice )
Dried or smoked fish ( of choice )
Cow skin ( kpomo )
Stockfish ( 1 big sized )
Shelled Periwinkles ( 1 cup )
Palm oil ( 5 cooking spoon or more )
Red or yellow fresh pepper
Crayfish ( 1 ground cup )
Stock cubes ( to taste )
Salt ( to taste )

PROCEDURE FOR COOKING -

Firstly, you make sure that everything is neatly ready

PROCEDURE FOR COOKING

1: Steam the meat with pepper, stock cubes, salt and when it is almost done, add in the dry/smoked fish, stock fish and other proteins.

Cook until all are properly cooked, remove the dry fish and set aside, if only, you don't want it to disintegrate/scatter in the soup.

NOTE: Little water should be used to steam the various proteins Remember not to add water yet as waterleaf can boil and bring out water..

2: Add In the meat stock, add in the shelled periwinkles, ground crayfish and ground peppers and allow to boil for 1 minute.

3: Add in the palm oil and allow to boil on medium heat for 6 to 8 minutes.

NOTE: This step is optional, you can add the palm oil at the end of the cooking of the soup, that is after step 5.

NOTE: The Palm oil should almost be the only liquid in this soup.

4: Now add in the sliced water leaf and leave to boil for 3 to 5 minutes on low heat.

5: You can now add in the removed steamed fish into the cooking soup and allow to boil for 1 minute.

6: Finally add in the blended/ground/pounded Afang leaf into the cooking soup and leave to boil for 1 - 2 minutes.

NOTE: The afang leaf is what is used to thickening this soup.
