In a layer of trifle, Hannah Glasse initially described this type of dish as jelly in her 18th-century book The Art of Cookery. In the nineteenth century, English cuisine authors Eliza Acton and Isabella Beeton published best-selling cookbooks that included recipes for jelly.

Jelly can be created using either premixed gelatin with additives or plain gelatin combined with other components. Fully made gelatin desserts are offered for sale in a range of shapes, from enormous decorative forms to small serving cups.
