Homemade Fresh Peppercorn Sauce

Crafted from freshly harvested green peppercorns, our homemade black pepper sauce delivers a bold, aromatic kick that elevates every dish. We carefully select high-quality peppercorn clusters, picked at their peak to preserve their vibrant flavor and natural spice.

Each batch is handcrafted in-house, slowly simmered to unlock the deep, rich pepper aroma while maintaining a smooth, velvety texture. The result is a perfectly balanced sauce — fragrant, slightly spicy, and full of natural pepper flavor.

OUR LAMB & CHICKEN sauce from Scratch

Brown stock is a classic foundation in professional kitchens, made by slowly extracting deep flavor from roasted bones and vegetables. The process begins by roasting beef or veal bones in a hot oven until they develop a rich, caramelized brown color. Mirepoix—typically onions, carrots, and celery—is added and roasted together to enhance aroma and sweetness.

Once deeply browned, the bones and vegetables are transferred into a large stock pot. The roasting tray is deglazed with water to capture the flavorful caramelized bits, which are then added to the pot. Cold water is poured over the bones along with tomato paste and aromatics such as bay leaf, thyme, parsley stems, and black peppercorns.

The stock is brought gently to a boil and then reduced to a slow simmer. During the long cooking process, usually 6 to 8 hours, impurities and fat are skimmed from the surface to maintain clarity and purity of flavor.

The Star: Beef Asam Pedas

The Gravy: This "sour and spicy" stew features a vibrant, oil-shimmering red base made from a blend of tamarind (asam jawa) for tartness and a robust paste of dried chilies, shallots, and ginger.

The Protein: Tender chunks of beef are slow-cooked in the gravy, allowing the meat to absorb the sharp, spicy infusion.

Aromatics: It is garnished with fresh curry leaves and whole red chilies, which release an earthy fragrance that balances the acidity of the tamarind.

Traditional Accompaniments

Sambal Belacan: Served in a side saucer with a whole chili garnish, this fermented shrimp paste sambal adds a deep, salty umami to the meal.

Nasi Putih: A clean, steamed mound of white rice serves as the essential base to soak up the plentiful, spicy gravy.

Cucumber: Crisp, fresh cucumber slices are layered on top of the rice to provide a cooling crunch and a necessary palate cleanser.

Unlike the creamy coconut base of the Ayam Masak Lemak, the Asam Pedas offers a sharp, appetizing acidity. The combination of the melt-in-your-mouth beef and the zingy sauce creates a high-contrast flavor experience that is both refreshing and deeply satisfying.
