Los chavos de la Prepa 2 disfrutando de sushi

Home Cooking Sessions: Wagyu Donburi. There’s no rice bowl quite like this one. Full recipe below 👇🏽😍

1. Get some A5 Wagyu - this was a large sirloin from @fineandwild - it arrives frozen, so thaw in fridge for 24h. Always the best produce from here. I’d say 150g pp is a good rule of thumb for A5.
2. Once thawed, season with sea salt and black pepp, then leave in fridge uncovered for a few hours
3. Wash some sushi rice (~100g pp) till water runs clear, then cook in a rice cooker
4. Thinly slice 2 cloves garlic and add to a med-heat pan with 1tbsp sesame oil - cook for ~4 mins till golden and crispy - set aside (forgot to film this)
5. Marinated egg yolk: cover the egg yolk with equal parts dark soy, mirin and sake - leave to marinate for 30 mins
6. Donburi sauce: add 150ml sake, 100ml mirin, 200ml dashi, 150ml soy sauce, 150g sugar + a torn sheet of kombu to a pot - bring to boil 
7. Simmer for 10 mins, then remove from heat and add in 20g katsuobushi - steep for 15 mins 
8. Strain the sauce then add back to pan and reduce till slightly thickened 
9. Allow steak to come to room temp. Pat dry, then add to pan on high heat, laced with beef tallow / oil
10. Press down and sear for 1.5-2 mins, then flip and baste in its own fat continuously 
11. Remove steak once internal temp hits 115f, cover with foil and rest ~10 mins 
12. Season the rice with a few tbsp of sushi rice seasoning
13. Slice the wagyu then assemble: rice first, then the wagyu, marinated egg, garlic chips, a little Donburi sauce and chives
14. I think caviar works well here, so add it if you like it - this was @caviarsturia - super salty and sumptuous

One of my favourite things to make. Steak and rice, elevated. A5 is so rich so 150g is plenty. Nothing I love more than Donburi #notoriousfoodie 🙅🏽‍♂️
