Gluten Free Sourdough - for the first time.

The hardest part than the baking itself has been procuring good and affordable gluten free flours and binders, but hoping to carry on in this journey and introduce it to our menu soon.

It started with "What's that thing flying in the game?" I used to call it an ugly potato sack flying around on screen 🤭 Every time someone asked me what game he plays, I never had the answer, just that there was some weird character floating about. He was so embarrassed that I didn’t know by now. One day I finally googled ‘PS5 game with ugly thing flying’ (yes, really 😂) and found out it was Expedition 33.

For his birthday, I decided to turn that ‘ugly potato sack’ into something special, painted every little detail onto a macaron cake. Honestly one of the hardest cakes I’ve ever made, but so worth it.

Happy 38th to my favorite player. Turns out your game isn’t ugly after all, it’s actually kinda beautiful 💛✨

To our valued customers and community,

We are aware of a widely circulated post online regarding a recent staffing decision. Out of respect for those involved, we have until now chosen not to respond publicly, but in light of the misinformation being spread and the impact it has had on our small business, we feel it's necessary to share our side clearly and respectfully.

The employee in question was hired on a probationary contract, which allows both the employer and the employee to assess whether the position is a good fit. During her two full working days, we noted multiple ongoing concerns relating to hygiene, safety, and task management, all of which are critical in a professional food environment.

At Fonithoshi, we work in a very small team where efficiency, initiative, and adherence to basic food safety practices are essential. Our bakery is where my family and I work tirelessly often more than 12 hours a day to build a life and serve this community with quality bakes and heart. It is not a corporate environment with layers of HR. It’s a hands-on, high-pressure kitchen that requires both physical stamina and a willingness to learn quickly.

We did not make this decision lightly. It was made thoughtfully and legally, in accordance with the signed probationary agreement, and the employee was fully compensated for her time.

While we understand that emotions may be running high, we strongly disagree with the exaggerated and misleading claims being made online. These statements do not reflect the actual events and are unfairly damaging the hard work of the people behind this business, many of whom are volunteers, friends, and family.

We are deeply grateful to those who continue to support us, especially other small business owners who understand the realities of running a kitchen. We remain focused on growth, learning, and serving you with honesty and passion.
