This Thursday we return to the Caribbean.

Waste not want not. Mike is making another batch of milk punch today. For the curds we will try to make some drunken cheese.
Iv tried this before and didn’t turn out very well... when I started out cooking I did the same thing in a sock at home. Decided to dry it out in the glove compartment of my Ford Fiesta for a few weeks. It didn’t taste as good as I’d hoped.
A few years on and hopefully it’s better this time let us know if you want to try.

The knife is a 240mm Gyuto. Forged San Mai with 1095 core steel and wrought/nickel cladding.
Cutting edge is 233mm, 59mm heel.
The thickness at the spine is 3.4mm, tapering to 0.7mm 1 cm from the tip.
It is a very nice knife if I can say so myself :)
