Raw honey is usually packed just as it was harvested from the combs, after passing a consumption evaluation test by farmers/harvesters or relevant specialists.

Processed honey has been pasteurized (heated to a high temperature, usually around 160°F, to kill yeast and bacteria that can cause spoilage) and filtered (pressured through a very fine filter) to remove debris such as pollen and improve its appearance.

Processing, however, especially during filtration may also do away with enzymes and antioxidants naturally found in raw honey. Our Baringo Honey is known for its raw indigenous nature, harvested from an acacia filled eco-system, meeting the expected moister, sugar and acidity content, hence maintaining a long quality shelf life.
