Potential can emerge through creativity, participation, and human connection.

At Refettorio Felix, workshops, volunteering, and shared experiences become opportunities for people to meet, learn something new, and reconnect with others in meaningful ways.

A few perspectives from the people who shape these moments every day.

On Sustainable Gastronomy Day, we recognise cooking as a cultural practice rooted in respect: for ingredients, for people and for the knowledge passed from one kitchen to another.

Through seasonality, resourcefulness and respect for ingredients, food carries knowledge across generations.

What does potential look like inside a Refettorio?

At Refettorio Felix, this idea takes shape through the people, moments, and experiences that define everyday life around the table.

A reflection on how potential can emerge in unexpected forms, through food, hospitality, and human connection.

Ever stare into the fridge and think there’s nothing to cook?
Bread is Gold was created to change that perspective.

Through recipes inspired by leftovers, simple ingredients, and everyday cooking, the book explores the extraordinary potential hidden in what is already there.

Inspired by the first services at Refettorio Ambrosiano in Milan, the book brings together recipes created by chefs from around the world, all contributing their own approach to cooking with creativity, care, and resourcefulness.

The Earth is sending signals, but we often notice them only when they become impossible to ignore.

Yet some of their causes - and some of their solutions - are much closer than we think.

They can be found in the everyday choices we make around food: how we shop, cook, store, share, and value what is on our plates.

This World Environment Day, take a moment to reflect on the signals around you, and on the role food can play in the response.

What signal will you send?

We believe that potential is making the invisible visible.

Some of the most meaningful things begin with what is often overlooked: an ingredient considered too simple, a leftover thought to have no value, a gesture that might otherwise go unnoticed.

At Food for Soul, this way of seeing has shaped our work from the very beginning. Through creativity and care, ingredients that are discarded or undervalued are transformed into meals that reveal new possibilities.

Potential is not about changing the nature of something, but about recognising the value that was already there.

From Bread is Gold to everything it can become, we know it by now: bread can turn into the most unexpected desserts.

In this episode of Sustainable Kitchen, Pastry Chef Doina Paulesco from Osteria Francescana starts from what’s usually left aside - crusts, bran, and seeds - and gives them a new role.

It’s about value: seeds represent growth, continuity, and the idea of a future, while even the parts we usually overlook can become the starting point for something new.

Service is a way of life.

In Refettorio projects, service means choosing to be there for others, offering time, attention, and support in ways that can adapt to different needs.

It is not defined by a single role or action, but by a willingness to contribute, to care, and to support the community in whatever way is possible.

This is how service takes shape within the Refettorio Model: as something that supports others, while also shaping those who offer it.
