Brewery Toccalmatto in Fidenza, was born in October 2008, with a 550 Litres per batch brewhouse.

Let’s see how the founder Bruno Carilli explains us about his American Pale Ale.

Re Hop is made with Pils malt base and the most iconic American aroma hop.

It's designed to make both US and German tradition come together.

Citrusy and grassy aroma, with orange/tangerine character of Cascade and herbal notes of Saaz are showcased.

The maltiness is subtle, leaving a bitter and refined finish.

It is so drinkable that you can remember it, like his name, as the hop’s King beer!

Tell me what you like today and I’ll find your beer!

When you have so many choices of craft beers it is very hard to decide the first one. Fundamental is the knowledge of your publican.

For newcomers is very important the first tasting approach, for experts it is funny to share with other professionals.

We always suggest to go for a tasting path, starting with light and delicate beer and then go up with strongest and complex beers.

What do you like today? Often depends on your own taste and sometimes from your mental condition ;-)

Usually the first and more important question is: which kind of taste do you prefer, sweet or bitter?

The sweetness could be divide in fruity, banana, floral and peppery or spicy. This family comprises, among the most appreciated, Weizen-Blanche style, Belgian Triple and Strong Ale.

Do you feel more bitter? There are different kind of bitterness: botanic, earthy, pithy, dry, from America Pale Ale, fruity and resinous, to grassy and dry Pilsner and Lager.

If you like biscuit, toffee, nutty and caramel you need to try a Brown Ale or Scotch Ale.

To awake or clean your mouthfeel maybe you need a Sour ale that is citrusy, acidic or lactic.

If you have affection deficiencies, you need more chocolate, coffee, licorice, toasted nuts and to***co, so your best choice is roasted based beer as Stout or Porter.

If you need a beer to meditate or forget about your problems go for warmer beers with notes of wood, vanilla as Barrel aged or Barley wine.

There’s one for every moment and every moment is better with a good beer!

In 1842 in the Czech town of Plzeň in Bohemia (now the Czech Republic) was invented Bohemian or Czech Pilsner.

The first-one-ever was Pilsner Urquell by Pilsner Urquell Brewery.

Urquell means "the ancient source”, because water was very soft and low in mineral content, basically the ingredient which contributes the most to beers’ quality.

A Czech Pilsner is clear, from pale to golden color, the style is lager, with a thick, creamy, big white head. Pouring one of these in a tall, narrow glass results in a splendid presentation!
Pouring method is in 3 times around 7 minutes, the glass is down and kept far from the tap, with the first time you go to fill the glass, wait few minutes, with the second one you go to continue with the filling and the third is finishing the foam hat.

It is made with only Pale malt as Pilsner, that gives a crisp and refreshing taste with a complex maltiness and bitterness.
Saaz hops flavor is obvious with floral notes, without fruity esters character.

Befana Chinata was founded in 2011 as a project by Stefano Romagnoni (Pazzeria's Founder) and Geco Brewery that set up a recipe and crafted the Christmas beer.

Every year this beer became itinerant, made by a different brewery and with a new recipe.

This year Our Santa Claus is Federico Casarin of Doge Brewery. He made a version high in alcohol (around 8% abv) with golden color and tons of Cinchona Bark, making it so spacial.

Medium body, very clean and refreshing.

Toccalmatto Brewery - Birra Toccalmatto
Sibilla

Classic Belgian Saison Ale beer style, made with wheat that makes it opalescent and refreshing.

The Belgian yeast used gives floral and spicy aromas, while remaining dry and very drinkable.

We suggest to drink it around 8° celsius degrees in a tulip glass.

Sibilla is excellent to combine with Rice-based dishes, sushi or creamy cheeses.

NO water NO beer!

Water is perhaps the most overlooked ingredient because it is considered tasteless. More than 95% of beer’s composition is, you guessed it, WATER.

Water impacts beer in three ways. Water ions are critical in the mashing process for all grain brewers, where the character of the water determines the efficiency and flavor of the extracted wort. Water also affects the perceived bitterness and hop utilization of finished beer. Finally, water adds flavor directly to the beer itself as water is the largest single component in finished beer.

Often a particular beer is associated with the water profile of the city in which the beer originated. There is a listing of water profiles for popular brewing cities of the world, which it is very interesting to understand how the water has an important contribution to characterize a style.

Weizen hop is Weizen (German is "wheat") beer style.
It is opalescent golden beer with medium body and persistent foam.
The dense head gives off aromas of vanilla, cloves and banana. The fruity esters balance the hint of wheat.
Lemon at the nose. Unique flavors superior drinkability lasting into an aromatic refreshing ending.

Never Judge a Beer from its Color!

Are dark beer always high in alcohol content? -Wrong-

What gives the color to the beer? - Malt-

Malt is grain (usually barley) that is processed in order to convert grain starches to sugars.

American base malt (Maris Otter) is generally mild and fairly neutral; British malts tend to be maltier, bready, and biscuit-like.
The European climate gives malts made from Continental barley a clean, “elegant” character. Pilsner malt has a soft, delicate maltiness that practically defines pale lagers.

Crystal malts are generally used to add sweetness and color, in fact they’re usually named based on color. The lighter-colored crystal malts are more strictly sweet, while darker crystal malts can add some roastiness or nuttiness in addition to sweetness.
On the extreme light end, there are dextrin malts. These malts also add dextrins, which contribute body and a thicker mouthfeel to beer.

Roasted malts are any malts or grains that are roasted to a very high degree. They are called black malt, chocolate malt, and roasted barley. They give flavors of roasty, bready, biscuity, coffee, dark chocolate.
