Traditional Rich boozy Christmas cake ♥️

Let me tell you about how this gorgeous cake came to be..
Baking a traditional English rich fruit cake has always been a wish of mine.. So when Kitchen Kemistry by Cheryl R announced a Christmas fruit cake bake off, I knew I could not let this opportunity go by! Christmas came early when I was selected to be one of 250 participants from over 900+ applicants..
Thus began our journey.. from learning about the history of fruit cakes, understanding which dry fruits should go into it, the delicate balance of spices,how different spirits contribute to the final profile. Then to actual baking technicalities... where we learned the right way to line our pans, the ideal temperature for baking and onto basting and curing these beauties! Cheryl you are an outstanding teacher with a heart of gold.Your patience and dedication is extraordinary! Each and every detail so beautifully explained, the "why's" and "how's" so clearly detailed, guiding and mentoring us until we baked a masterpiece! The take aways from this bake off have been immense.. This experience and the wealth of knowledge we have all acquired has been incredible and I shall cherish it just as I know my family and loved ones will cherish these beautiful rich Christmas cakes for years to come!
