Process for Establishing a HACCP System
The organisation shall form an HACCP team to design and plan the establishment of HACCP System. During this process they need to:
- Establish prerequisite programmes
- Establish management commitment to food safety
- Gather all information that related to product safety factors from material, processing, and storage till delivery to customer
- Establish product process
- Analyse the hazards during product process
- Identify critical control points and its control measures
- Establish monitor programme for the critical points
- Establish corrective action process for any deviations
- Establish improvement process for HACCP system
- Identify necessary documents and records to ensure that above processes are under control
