Having a fantastic time in India so far!
Spent the last couple of days in Goa, loving the relaxed vibe here, the rich seafood cuisine, coastal breeze and the fresh Alphonso and Mankurad mangoes!
We visited the top of Chapora Fort, the iconic location from the movie Dil Chahta Hai, and breathtaking views of the beach and Arabian Sea.
Also visited Parra Road (the first pic), the famous road in Goa lined with Palm Trees.
Next stop, Mumbai!

Feeling truly blessed and fortunate to have been given the opportunity to visit our holy land and perform my Umrah. It’s a moment I’ll always hold close to my heart, and I sincerely hope that everyone who wishes to visit gets the chance one day, inshaAllah.
To those who asked me to pray for them, I did, wholeheartedly. And I've prayed for all my followers, for ease in your hardships, strength in your challenges, good health, peace of mind, lasting happiness, and endless barakah in your life.
Please keep me in your prayers as well, and pray that He accepts mine.
And we remember our brothers and sisters in Palestine, always in our hearts and duas.
Alhamdulillah for this blessed moment.
Creamy Chicken Pesto Pasta
Re-posting this simple recipe, perfect for iftar.
Ingredients
200g penne pasta
1 tablespoon butter
2 tablespoon olive oil
1 tablespoon olive oil for marinade
250g boneless chicken breast, thinlyvsliced
1 teaspoon salt or to taste for chicken
1 teaspoon salt or to taste for sauce
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon dried mix Italian herbs
1/2 teaspoon cayenne pepper
1/2 cup chicken stock
60ml double (heavy) cream
3 tablespoon red pesto
1/2 cup pasta water
1 tablespoon tomato paste
3 cloves garlic, minced
Fresh parsley to garnish
Red chilli flakes to garnish
Instructions
1) Thinly slice the chicken breast and marinate it for at least one hour.
2) Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a pan.
3) Add the marinated chicken, cooking each side until browned (5-7 mins).
4) Create a space in the middle, add 3 cloves of minced garlic, cook until golden, then mix with the chicken.
5) Add 1 tablespoon of tomato paste, mix, and pour in 1/2 cup of chicken stock.
6) Combine well, add 1 teaspoon of salt, and simmer on low heat.
7) While the chicken simmers, boil water with a pinch of salt.
8) Cook 200g pasta until al dente.
9) Mix 3 tablespoons of red pesto into the chicken mixture.
10) Pour in 1/4 cup of double (heavy) cream and stir thoroughly to combine.
11) Transfer the boiled pasta into the pan, mixing well with the creamy chicken sauce.
12) Add 1/2 cup of pasta water to achieve the desired consistency.
13) Cook for a few minutes until everything is well combined.
14) Garnish with fresh parsley and red chili flakes according to your preference.
15) Plate up and enjoy!
