Sharing the recipe of SALMON AVOCADO SALAD. It's light yet filling, and simple enough to be made in under 20 minutes.
Ingredients:
• 4 cups baby spinach
• 2 tomatoes, chopped
• 1 avocado, diced
• 1 cucumber, peeled and sliced
• 1/4 cup red onion, chopped
• 2 tablespoon olive oil
• 2 salmon filets
• salt and pepper, to taste
Instructions to prepare
• Heat olive oil in a large pan over medium-high heat. Season salmon with salt and pepper. Cook salmon top side down for 4-5 minutes.
• Flip salmon and cook an extra 2-3 minutes until it's mostly opaque but still slightly soft in the middle.
• Divide remaining salad ingredients into two bowls and top with cooked salmon.
• Mix dressing ingredients in a small bowl and drizzle over the salad.
