When making a Sourdough with inclusions, lamination is one of the methods to impart flavor to your dough as well as build strength.
Here, we’re using Sunflower seeds and flaxseeds as our inclusions for this seeded loaf.
Once your dough has completed bulk fermentation, all you’ve to do is spread the dough on your countertop as thin as possible without tearing the dough. Then put your first layer of inclusions. Using the letter fold method fold the dough and add your second and third layer of inclusions.
Finally, roll the dough from the shorter end and seal it.
Now let the dough final proof before baking!
