Apricot icecream made with dehydrated apricots and served with pickled mustard and dried Aster petals. Served as a pre dessert in the current tasting menu

And the dehydrated trout skins make nice crisps!!

Sharp sunlight and low humidity are perfect conditions for sun drying ingredients. In picture is sea buckthorn from last year that had been dehydrated. A staple in our pantry for providing that needed acidity in our dishes and at no cost at all

Growing our own ingredients also gives us chance to carefully observe them for the subtle to bold flavour difference over its lifecycle. And at different stages of the ingredients' lifecycle we use it for different purposes
