Mirepoix*

It is a flavor base made from diced vegetables cooked. Usually with butter, oil, or other fat for a long time on low heat without coloring or browning, as further cooking, often with the addition of tomato purée, creates a darkened brown mixture called pinçage. It is not sautéed or otherwise hard cooked, because the intention is to sweeten the ingredients rather than caramelize them. It is a long-standing cooking technique in French cuisine.

What’s an OTA?

OTAs (online travel agents) have been a subject of huge controversy in the hotel business for well more than a decade.  The sector is led by the likes of Expedia and Booking.com which have established a virtual duopoly (at least in the western world) as online intermediaries for the booking of hotel accommodation (as well as apartments and holiday rentals). What a wonderful performance by Saikhom Mirabai Chanu. She is born on 8 August 1994. She won the silver medal at the Olympics 2021 in women's 49 kg category. She lifted 202 kg. Mirabai has won the world championships and multiple medals at the commonwealth games. She was awarded the Padma Shri by the Govt of India for her contributions to the sport and Rajiv Gandhi Khel Ratna award in 2018.
