• Sweet Potato Curry •
✨without onion & garlic✨

This is a sattvik dish and can be consumed in fasting.
A great substitute for potato, and a light curry, this can be made using :

Sweet potato (3-boiled and peeled)
Tomato (2- medium chopped)
Green chillies (2- chopped)
Ginger paste (1 inch)
Cumin seeds (1/2 tsp)
Mint leaves (8-10)
Red chilli powder (1/2 tsp)
Haldi powder (1/4 tsp)
Rock salt (1 tsp)
Garam masala (1/4 tsp)
Amchoor powder (1/4 tsp)
Coriander powder (1 tsp)
Oil (2 tbsp)
Water (1 1/2 cup)

Steps:
1. Heat oil in a pan. Add cu**in seeds and ginger paste.
2. Add tomatoes. Saute for 2-3 mins.
3. Add green chillies.
4. Add red chilli powder, haldi powder, dhaniya powder and salt. Mix well.
5. Add water to the roasted masala.
6. Cover for 2-3 mins.
7. Uncover and add sliced sweet potato.
8. Let it cook for 2-3 mins.
9. Add amchoor powder and garam masala. Mix well.
10. Garnish with fresh mint leaves.

• Orange- Mint Mocktail •

Taste the flavor of real fruits with Real Fruit Juice. Make this amazing mocktail packed with multiple flavors with two of my favorite Real juice flavors - Orange & Mixed Fruit.

Tag someone who cannot resist mocktail ❤️❤️


You require :

Lemon juice (3-4 tsp)
Sugar syrup (2 tsp)
Fresh mint leaves (6-7)
Fresh orange juice (1/2 cup)
Real - mix fruit juice (1/2 cup)
Catch Soda (1/2 cup)

1. Add some ice cubes, lemon juice with sugar syrup.
2. Add orange juice and mix fruit juice.
3. Add soda just before serving.
[ Try to prepare the mocktail just before serving to bring the colour]
4. Serve chilled garnished with mint leaves.
5. Enjoy.

• Masala Bites •

Make these amazing bites filled with amazing flavors for your evening snacks.

You require - ✨ For nachos:
Maize flour (1 cup)
Wheat flour (1/2 cup)
Salt (1/2 tsp)
Carrom seeds (1/2 tsp)
Oil (2 tsp)
Water (lukewarm - 1/2 cup)

Steps:
1. Mix all the ingredients together and make a soft dough.
2. Make a very thin chappati out of the dough.
3. Poke the chappati with a fork to create holes in it.
4. Cut in triangles or squares.
5. Fry. ✨ For masala beans:
Heinz baked beans (4 tbsp)
Oil (2 tsp)
Cumin seeds (1/4 tsp)
Onion (1- small)
Tomato puree (3 tsp)
Garlic (4-5 cloves - chopped)
Red chilli powder (1/2 tsp)
Haldi powder (1/4 tsp)
Coriander powder (1 tsp)
Salt (1/2 tsp)

Steps:
1. Heat oil in a pan and add cumin seeds.
2. Saute the garlic and onion till transparent.
3. Add the tomato puree and red chilli, haldi , salt and coriander powder. Mix well.
4. Add baked beans. Saute for 2 mins and keep aside. ✨ For dip:
Mayonnaise (3 tsp)
Tomato (1- chopped)
Fresh green coriander (chopped)
Green chilli (1- chopped)
Salt (1/4 tsp)

Steps:
Mix all the ingredients together.

Lastly, top the nachos with masala beans and the Mayo dip.
Enjoy your prepared nachos with Mayo dip.

• Gond Ke Ladoo •

Gond Ke Ladoo is an old and traditional recipe which reminds of our childhood. It is mostly prepared during the winter to prevent us from catching colds. It is a very simple recipe and can be prepared with few ingredients.

• Instant Dhokla •

Dhokla is a Gujarati snack. It is very light, delicious and has a number of health benefits. Mainly because of the ingredients which are used - Besan is a good source of protein. It is easier to digest, helps in losing weight and what not.
To make this healthy evening snack, you require:

Besan (1/2 cup)
Sooji (2 tsp)
Water (1/2 cup)
Ginger (1 inch)
Green chilli (2- small)
Haldi (1/4 tsp)
Salt (1/2 tsp)
Sugar (1/2 tsp)
Lemon juice (2 tsp)
Baking soda ( a pinch)
Eno fruit salt (1/2 tsp)
Refined oil (1 tbsp)

For tadka :
Mustard seeds (1/4 tsp)
Hing ( a pinch)
Green chilli (3-4 split from the middle)
Sugar (1/2 tsp)
Salt (1/4 tsp)
Vinegar (2 tsp)
Oil (1 tsp)
Water (1 1/2 cup)

Steps:
1. Mix besan and sooji together.
2. Make a green chilli- ginger paste and add to it. Add haldi and salt.
3. Add water and whisk.
4. Add lemon juice and sugar. Add baking soda. Mix well.
5. Cover and rest for 15 mins.
6. Then add oil to it and whisk well.
7. Add Eno salt, mix and put in a microwave dish (greased with oil) immediately and microwave for 6 mins.
8. Add oil in a pan. Add mustard seeds and asafoetida.
9. Add the green chillies and fry a little.
10. Add water to it.
11. Add sugar, salt and vinegar as it starts boiling.
12. Switch off the flame and let it cool.
13. Cool the prepared dhokla and pour the prepared tadka over it.
14. Garnish with coriander and keep in fridge so that water is soaked completely (for 15 mins)
15. Enjoy.

• Flavored Lassi •

To make this refreshing and easy Lassi made from coriander, you require :

Ginger (1 inch)
Coriander (1/2 cup)
Salt (1/2 tsp)
Roasted cumin powder (1/2 tsp)
Black pepper (1/4 tsp)
Buttermilk (4 cups) [⚠️ It should be fresh, not sour]
Water (1/2 cup)

Steps:
1. Whisk the buttermilk properly.
2. Grind coriander, cumin powder, salt together with water in a mixer.
3. Add this to the buttermilk.
4. Add black pepper and whisk again.
5. Serve chilled.

• Rice Parantha •

To make tasty and easy paranthas from your leftover rice, you require :

Leftover rice (1 bowl)
Aata (1 bowl)
Coriander (1/2 cup)
Green chilli (2- chopped)
Onion (1-medium)
Carrom seed (1/2tsp)
Garam masala (1/4 tsp)
Red chilli powder (1/2 tsp)
Haldi powder (1/4 tsp)
Salt (1/2 tsp)
Oil ( for frying)

Steps:
1. Take aata in a bowl and add the leftover rice.
2. Add all other ingredients and mix well to make a dough using water.
3. Rest for 15 mins.
4. Marker thicker chapattis than usual out of the prepared dough.
5. Shallow fry them using oil on a pan until crispy as done with parantha.
6. Enjoy

• Kesari Mithaas •

Vasant Panchami is the Hindu festival that highlights the coming of spring. The color yellow is the predominant color associated with the festival. Meethe chawal is a popular sweet dish made on this festival.
To make this at your home you require :

Rice (2 cups)
Ghee (3 tbsp)
Dry fruits (almond, cashew, raisins)
Clove (3)
Green cardamom (2)
Green cardamom powder (1/2 tsp)
Kesar strands (4-5: soaked in milk )
Sugar (1 1/2 cup)
Water (4 1/2 cup)
Orange food colour (2-3 drops)

Steps:
1. Only wash the rice in water ( Do not soak)
2. Take water and just dissolve the sugar in it.
3. Take ghee in a pan and add cloves and green cardamom.
4. Add dry fruits and wait till light brown.
5. Add the washed rice to it. Keep mixing at low flame for atleast 10 mins.
6. As soon as the rice leaves the ghee at sides, add the prepared sugar syrup. Mix.
7. Add the soaked kesar to it. Add cardamom powder. Mix evenly.
8. Add 2-3 drops of orange food colour
9. Let it come to a boil and cover with lid. Let it cook for about 15-20 mins.
10. Turn off the flame and let it cook in steam for 5 mins.
11. Open the lid.
12. Enjoy

• Stuffed Rice Balls •
An easy recipe for your evening snacks made from you leftover rice !!
How cool is that ?
To make this easy recipe you need : Leftover rice ( 1 bowl )
Potato (2 - boiled )
Bread crumbs ( 1/2 cup )
Green chilli (2- chopped)
Ginger (1 inch - grated)
Coriander ( chopped)
Red chilli powder (1/2 tsp)
Haldi powder (1/4 tsp)
Salt (1 tsp)
Garam masala (1/2 tsp)
Amchoor powder (1/2 tsp)

For stuffing:
Spinach ( blanched - 1 cup)
Paneer (1/2 cup - grated)
Jeera
Garlic (4 cloves - sliced)
Red chilli powder (1/2 tsp)
Haldi powder (1/4 tsp)
Salt (1/4 tsp) - as spinach already has salt
Amchoor powder (1/2 tsp)
Oil (2tbsp)

Cornflour slurry (for coating)

Steps:
1. Mix potato and bread crumbs into the leftover rice.
2. Add all the other ingredients and make a dough out of it.
3. Heat oil in a pan and add jeera and garlic to it.
4. As garlic turns golden, add red chilli powder, haldi powder, salt and amchoor powder.
5. Add the blanched spinach and paneer. Mix well.
6. Make small balls by stuffing some spinach mixture.
7. Dip in the cornflour slurry (cornflour + water).
8. Deep - fry.
9. Enjoy

• Daal Tadka •
To turn your simple daal into a dhaba style, you require:

Chana daal ( 1/2 cup)
Arhar daal (1/2 cup)
Mong chilka daal (1/4 cup)
Onion (1 big)
Tomato (2)
Green chilli (2)
Ginger garlic paste (1 1/2 tsp)
Oil (2 tbsp)
Red chilli powder (1/2 tsp)
Haldi powder (1/2 tsp)
Salt (1 1/2 tsp)
Coriander (chopped)
Garam masala (1/2 tsp)

For tadka :
Desi ghee (2tbsp)
Dried red chilli (2 whole)
Chopped garlic (4-5 cloves)
Jeera (1/2 tsp)

Steps:
1. Mix the 3 daals and soak in water for 30 mins.
2. Take the soaked daal in a pressure cooker and add 4-5 cups water.
3. Add 1/2 tsp salt and 1/4 tsp haldi powder.
4. Cook for about 4 whistles at medium flame.
5. Mash the daal a little.
6. In a pan, add oil. Add jeera, onion.
Saute the onion till golden.
5. Add chopped tomatoes, green chillies and ginger-garlic paste and saute.
6. Add red chilli powder, haldi powder and salt. Mix well.
7. Add the cooked daal to this pan. Let it come to a boil.
8. Put the prepared daal into a bowl.
9. In a tadka pan, take ghee. Add jeera, chopped garlic to it.
10. Add the dried red chilli as the garlic turns golden.
11. Put this immediately into the daal.
Garnish with fresh coriander and garam masala.
