Slow-simmered herbs and stock rising in a fragrant cloud, and the silent moment of peace before the first spoonful.

Despite its name, which literally translates to “butter cream,” it is a delicate, air-like foam made from churned milk cream. It is characterized by its exceptionally light, cloud-like texture that melts almost instantly in the mouth.

Milk is boiled, mixed with fresh cream, and then left out overnight under the open sky to absorb the winter dew. This dew-exposed milk is then hand-churned for hours in the morning until it achieves its distinctive airy foam consistency.

You eat lot of food in your lifetime but there are few that stays with you forever and this is one that I will carry in my heart even without being a mutton lover.

My first visit to Lucknow and I must say the city has so much to offer for a culinary enthusiast.

What amazed me that most of places offerings were simple home recipe. A simple breaks fast dish but see how it turned to million dollar business. People from the locality, travellers like us everyone queuing up for one serving.

One must visit if you want to see it for yourself how a city marked its name in the globe with their gastronomy offerings.

When I wanna appreciate my team without saying much. I cook for them, business is not great and gloomy weather adding to it. I yet decided to go to Local Market just gazing at the market itself makes my heart feel lighter. So didn’t pick many things but few essential herbs and as passing by pork stall thought of my team and picked and what’s best than . So my humble gesture 🙏🏻
As I was leaving found these tiny spice bombs.

Two Seeds, Two Stories: Thoiding Pork vs. Til Pork
It’s a beautiful culinary paradox of Northeast India: Thoiding Pork and Til Pork share a foundational secret—a love affair between succulent pork and ground oilseeds—yet each boasts a distinct, unforgettable personality.

They are incredibly similar in taste in the most comforting way:

Nutty Warmth: Both dishes harness the rich, earthy, and deep nutty flavor that comes from roasting and grinding oilseeds. This forms the primary, enveloping flavor profile.

Hearty Texture: The ground paste of either thoiding or til thickens the curry or coating, resulting in a satisfying, unctuous texture that clings beautifully to the pork.

Regional Spice Base: Often, the underlying aromatics (ginger, garlic, chillies) and the cooking method (minimal, simple spicing to let the main ingredients shine) are common to both, giving them a shared regional pedigree.
