Wood Fired Oven: A long and steady 🔥 🔥 Around 7 hours of burn, brings the dome from 100 to around 500 degrees celsius. By then the black soot stuck on the dome and surface of the oven are completely burnt to ashes! The ashes are raked out and the hearth mopped clean. The oven is closed and left to equalise the soaked heat for about 24 hours. The next day, the oven is ready at about 245 c; the temperature to bake batches of breads and then, cakes and cookies as the temperature of the oven falls.

Been baking sourdough breads for a few years and now have “made the recipe my own” to make sourdough breads the way i wanted it to be - as little tangy / sour profile as possible, soft crumb and a decent oven spring. No other additions. That means only 3 Ingredients; Flour, Water & Salt.

Flour: Stone milled from organically grown Emmer wheat, an ancient variety. Used within 24 hours of milling, oxidation of flour is reduced as much as possible.
Process: Leavened with a natural culture (sourdough) made of just whole-wheat grain Flour and Water. The stable culture is home to 10’s of diverse species of yeast’s and Lactic acid bacteria’s.
Finally baked in the retained heat of a Wood Fired Oven.
Nutrition: Sourdough fermentation produces Natural Yeast, a good source of B Vitamins especially B12 and micronutrients. It breaks down the phytic acid in grains and makes bio-available the minerals in the wheat grain.
