We’re thrilled to release another complex and elegant coffee from the Trujillo family at Finca Patio Bonito.

This is our first offering of the Chiroso variety. Chiroso is a relatively recent cultivar. It was first identified during the 2012 Cup of Excellence competition in Colombia. At the time, it was thought to be a Caturra mutation, but it’s now understood to be genetically linked to Ethiopian landraces. It takes its name from the elongated shape of the cherries and seeds and has gained attention for its high cup quality and clarity. Recently, it has become a cultivar of choice for competitors in both the World Brewers Cup and the World Barista Championship.

In the cup, we find a composed sweetness set against a soft, tea-like structure and fragrant florality. As the coffee opens, dried berry notes begin to emerge, supported by a tart, sparkling acidity that reminds us of pink lemonade.

Grown at 1,700 meters in the cool conditions of Cauca, this lot reflects both the region’s natural clarity and the Trujillo family’s attentive approach to processing. We’ve sourced coffee from Patio Bonito in the past (through our partners at Cafe Imports), and the processing continues to improve. The result is a coffee that is transparent, balanced, and quietly expressive of place.

We recommend this coffee for filter brewing methods and modern styles of espresso (longer ratios and faster shots).

Nossa is a dried processed Brazilian coffee that is perfect for those that prefer a chocolatey and nutty coffee with mild acidity. It’s perfect for moka pot and home espresso machines and pairs well with milk.

Kayon Mountain Farm — Shakiso, Guji

This lot comes from Kayon Mountain Farm in Shakiso, Guji Ethiopia. The farm sits between 1900–2200 masl and is managed with a focus on long-term soil health, shade-grown cultivation, and precise harvesting.

This is a naturally processed selection composed of local Ethiopian landrace varieties. At this elevation, slow cherry maturation allows for both clarity and depth in the cup.

We find a profile centered on ripe and cooked stone fruit, layered with blueberry and soft cocoa. The sweetness is structured and persistent, supported by a complex, rounded acidity.

Kayon’s approach—from on-site nurseries to selective picking and careful drying—results in coffees that consistently express both the intensity and elegance of the region. This is an omniroast suitable for all brewing methods from filter to modern styles of espresso.

This is a clean and expressive microlot from Huila, produced by Javier Cardozo on his farm, La Cabaña. Sourced through Coocentral and Nordic Approach, it reflects decades of experience and a deep focus on clarity in the cup. Javier, who has been farming coffee for nearly fifty years, works with careful picking cycles and precise fermentation processes to create coffees with sweet and clean profiles . This coffee underwent a relatively long, 36 hour fermentation, before it was eventually washed and slowly dried on covered, raised beds.

In the cup we find a soft and balanced profile, with red fruit and plum layered over a brown sugar sweetness, finishing with a gentle herbal, tea-like character. It’s an approachable and versatile coffee—equally suited for filter and espresso.
