This delicious Goats Cheese Salad is so easy to make and so tasty.

Pop you favourite Salad leaves on a plate, add some sliced cucumber, halved grapes, chopped beetroot and toasted walnuts.

Top this with your warm goats cheese (I just popped it under the grill for a few mins), drizzle with balsamic and voila!

Anyone planning drinks and nibbles this evening?.....This is a really easy idea instead of buying crackers.....it's also a perfect way to use up a bagel that is gone slightly stale.

Cut a bagel into discs, add 1tsp each of garlic powder, onion salt, smoked paprika and parsley (you can add any combination of seasonings you like), drizzle with Olive Oil and pop into the air fryer at 190C for 4-5 mins, until crispy. Serve with dip/hummus or use as little crackers for cheese/paté

Hands up if you want a really easy pasta salad recipe🙌🏻

These type of salads are great to make in the warmer weather🌞 They store really well for a couple of days so can be made in advance, they are really filling as a meal on their own or perfect as a side to fish, chicken and all your summer bbq recipes. The added bonus with this recipe is that it make a perfect lunchbox filler too, so make sure you make loads.

Here's how ➡️

First for the dressing👇🏻
1/2 cup Olive Oil
3 tbsp white wine vinegar
1 tsp dill
1 tsp basil
1 tsp oregano
1 tsp Dijon mustard
1/2 tsp garlic powder
pinch salt and pepper

Mix all the ingredients together in a bowl/jug, this dressing will keep in a sealed jar in the fridge for a couple of weeks so make extra and save for other salads.

Cook the pasta according to packet instructions, when its done, drain off the water and run the pasta under cold water for 30-60seconds until its cold, this will rinse away any excess starch and stop it from sticking together.

Add the cold pasta to a large bowl, add in chopped cucumber, tomato and spring onion, crumble over some feta cheese and add a large handful of rocket, finally drizzle over the dressing and mix it all up.

An old recipe but a favourite!

SCONES

These are one of my absolute favourite thing to bake, they are so easy and just perfect comfort food, I would recommend eating when still warm from the oven. After cutting the mixture into scone shapes you can place on a tray/plate, pop in the freezer until frozen and then store in a bag (this way they can be taken out individually as they won't stick together), they can then be baked from frozen, super handy to have in the freezer.

Ingredients

450g self raising flour
100g cold butter
1 tbsp caster sugar
pinch salt
280mls milk
2 eggs

Method

1. Preheat oven to 200C
2. Rub together the flour and butter until it looks like rough breadcrumbs
3. Stir in the sugar and salt
4. In a jug, mix together the milk and eggs
5. Pour 3/4's of it into the bowl and mix to form a soft dough
6. Turn out onto a floured worktop and bring together with your hands, flatten slightly and cut out scones with a round cutter
7. Brush the top with the leftover egg/milk mix and sprinkle with some sugar
8. Bake at 200C for 12 mins
9. Enjoy warm with real butter and jam

🎉 It's nearly time for a weekend treat

Coffee slices are always my first pick at a bakery counter and here you can see how easy they are to make at home.

Ingredients

1 packet puff pastry
Hot black coffee
25g butter
150g icing sugar (plus some extra)
Seedless raspberry jam
Cream (whipped)

Method

1. Preheat oven to 180C
2. Cut some puff pastry into an even number of equal rectangles and place on a prelined baking tray. Place a lighter baking tray on top (this will stop the pastry puffing up too much) and bake for 12 mins, take off the top tray and bake for another 5 mins
3. When done allow to cool fully on the tray
4. When cold, add 25g of butter to a bowl and add in 3 tbsp of hot black coffee, stir to melt the butter (if it doesn't melt fully pop in the microwave for a few seconds), then sieve in 150g icing sugar, mix together until smooth, add more icing sugar if needed to end up with a thick but spreadable consistency.
5. Spread half the pastry rectangles with seedless raspberry jam (buy seedless or push normal jam through a sieve)
6. Add a layer of whipped cream and then top with the remaining pastry
7. Spread the coffee icing on top and allow to set slightly before eating

⚠️ Warning - these are very messy and very addictive

It's Pancake Tuesday tomorrow🎉

We have been using Daniels recipe in our house for a few years now, always goes down well, these need to be cooked when made not like a crepe style mixture which you can keep in the fridge.

Ingredients

265g plain flour
1 tsp baking powder
1 tbsp icing sugar
1 egg
1 pinch salt
350mls milk

Add all the ingredients to a large mixing bowl and mix until smooth.

Cook straightaway on a hot pan with some melted butter or cooking oil, when browned, turn over and cook the other side until golden brown.

*we normally double or triple this recipe

Serve with your favourite toppings

These Chicken Kievs always go down a treat in our house, I pan fried these but you could pop them into the oven or airfryer either.

You can prep these in advance and pop into the fridge until ready to cook.

Make sure you are following for lots more recipes

1. In a bowl, mix together some butter, crushed garlic and chopped parsley
2. Slice the chicken fillets lengthways and fill with the garlic butter
3. Dip into a little bit of flour to coat
4. Then dip in a beaten egg
5. Lastly into some breadcrumbs
6. Fry in a drizzle of oil or spray with oil and pop into the oven (180C) or airfryer (190C) until golden brown and cooked through
