Limoncello has one rule: it has to be cold enough that the bottle is slightly viscous when you pour it. Keep it in the freezer. Pour it straight. Everything else is optional.

Ouzo 1893 is named after the year our great-grandfather first wrote down the recipe. The notes still exist. Nothing in the formula has been updated since.

The mastic tree only grows on the southern tip of Chios.
The resin is harvested by hand, twice a year, using techniques that haven't changed in centuries.
