Handa Somen originated in Handa Town, Japan, and has a history of hundreds of years. 我們 (Noodle Again) 從日本素麵生產商直接進口「半田素麵」。
「半田素麵」源自於日本德島縣半田小鎮,地區風景秀麗,擁有豐富的自然資源,特別是吉野川清澈的水源,這對於生產高品質的素麵至關重要。
工匠一直以傳統「手拉」製麵,保留了「半田素麵」正宗味道和質地,因而聞名,至今已有數百年歷史。其獨特風味 (光滑、彈牙、略粗、有嚼勁) 和傳統魅力,另人一試難忘。

🍮 茶碗蒸し|超滑嫩日式碗蒸蛋 ✨
滑嫩的蒸蛋、溫潤的高湯香氣,一口下去滿滿幸福感❤️
用上 Kamada だし醬油,輕鬆做出正宗日本風味!

🥚 材料(約2人份)
• 雞蛋 2顆
• 高湯(或水)300ml
• Kamada だし醬油 1大匙
• 味醂1小匙
• 鹽 少許
配料建議:
🍤 蝦仁 2隻
🍄 香菇 2片
🍳 作法步驟
1️⃣ 將雞蛋打散,避免打出太多氣泡。
2️⃣ 加入高湯、Kamada 醬油、味醂與鹽,輕輕攪拌後過濾。
3️⃣ 碗底放入配料,倒入蛋液。
4️⃣ 水滾後轉小火,蒸約10~15分鐘。
5️⃣ 出鍋後可再滴上幾滴 Kamada だし醬油 提香~

參觀「半田素麵」手工生產過程 (3) - 5小時熟成,成就極致口感
再一次嚟到「半田素麵」工場,今次逗留時間較長,睇到傳統手工方法製麵過程:揉麵、重覆合成、多次熟成、人手拉延、乾燥、收割、檢查挑選及包裝,體會到一絲不苟、嚴謹、有條理,對細節要求,秉承百年傳統。

Visiting the "Handa Somen" Handmade Production Process (Part 3) - 5 Hours of Rest for Dough Maturation
This time, I visited the "Handa Somen" workshop again, staying longer than before. I had the chance to witness each step of the traditional handmade noodle-making process: kneading the dough, repeatedly combining it, multiple stages of resting, hand-pulling and stretching, natural drying, harvesting, inspection and selection, and finally packaging. I truly experienced the meticulous attention to detail, the rigorous and orderly process, and the high standards maintained in preserving this century-old tradition.
