Free pesto alert with the carrots!

Carrots are back! ๐Ÿฅ• Organic carrots locally grown taste like a carrot! But did you know you can make a simple pesto using the leafy tops?

Make sure you wash and remove any dirt from your carrot tops and add the following to a food processor.

๐Ÿฅ• A bunch of Carrot tops (and stalks)
๐Ÿฅ• 50G of sunflower seeds (you can also use cashew nuts, pine nuts or pumpkin seeds, whatever you have in the cupboard)
๐Ÿฅ• 1 garlic clove crushed
๐Ÿฅ• 3 TBSP olive oil
๐Ÿฅ• 1 organic lemon juiced
๐Ÿฅ• Pinch of salt

Blitz in a food processor and tweak, salt, lemon and garlic to taste. I will be stirring pesto through my pasta tonight. As it makes more than I need, I freeze it in ice cube trays and chuck it in mid week meals.

Tomato appreciation post!
These have to be the best tasting tomatoes ever. My customers report back addictions to poping them like sweets!

They get used in everything although my favourites are tomato toast and pasta. Summer puff pastry pies are also delicious ๐Ÿ˜‹

They will now be back until the autumn.

I am back at this Saturday. 9.15-1pm.

I am bringing the first week of UK organic asparagus!
I also have celery, aubergine, potatoes, dirty carrots, cucumbers, cauliflower, purple sprouting broccoli, baby spinach leaves, adorning heart lettuces and delicious UK crimson crisp apples.

I know a lot of Kate's customers are budding veg growers. I will be bringing along tomato plants called "green zebra" to grow your own.

I have been a little bit quiet on social media. It is hard running the business independently and delivering in my van takes hours out of the day.

What inspiration would you like to see? More recipes? What I eat is plant based to balance fibre and protein maybe more on that? Or anything else?

Supporting local farmers is so important and no pesticides and nasties in organic. Just great tasting veggies delivered each week (or bi weekly)

What free gift did the greengrocer send this week? Lovely fresh mint is in your veg boxes this week.๐Ÿ’š

Shop bought mint sauce can have hidden dyes and preservatives so it's always nice to make your own from scratch.

To keep the mint fresh for the weekend add it to a glass of water and make sure the stems are submerged. Alternatively you can store the mint leaves between damp kitchen paper in the fridge.

To make mint sauce:
๐Ÿ”ธFresh mint (30g veg box)
๐Ÿ”ธMaple syrup (1tsp)
๐Ÿ”ธWhite wine vinegar (x2 tbsp) (or cider vinegar)
๐Ÿ”ธPinch of salt

Strip the mint leaves from the stalk and chop finely. Steep the mint in boiled water for a few minutes and then drain. Add the vinegar and sugar to a bowl and then add the mint. Add a pinch of salt, stir and allow the flavour to develop-20 mins. Then serve on yourroasties this Easter weekend. Enjoy!

Hot cross buns!
My van smelt delicious today delivering hot cross buns (plant based you can't tell) and raisin tea loaf.

I have to be honest I am not a fan of hot cross buns so I thought! I just tried one with a cuppa and they are absolutely delicious I am converted!
