I’ve not really been doing much baking since lockdown started. I’ve piled on weigh from being at home and have been avoiding cake like corona.

Salted Caramel and Honeycomb Cup Cakes. We call it Puff Candy back home and Cinder Toffee across The Pond. I’ve even heard it called Hokey Pokey. What do you call it???

🚨 first attempt at a stripy icing 🚨
I give you my Pina Colada Cake
Coconut and Kraken sponge, soaked with rum syrup, filled with pineapple smash and Swiss meringue buttercream. Yup you guessed it, there’s rum in the icing too, finished off with a little toasted coconut. No cocktail is complete without an umbrella and a monkey! 🍹 🍍 🥥
