In steep vineyard regions such as Cornas in France’s Northern Rhône, growers often use the traditional échalas system, where each vine is individually supported by its own wooden stake rather than a modern wire trellis.
The region’s steep slopes make mechanisation difficult, while strong winds such as the Mistral mean vines need additional physical support. As shoots grow, they are tied and trained by hand throughout the season, sometimes using natural materials such as reeds or straw ties, helping growers control vigour, organise the canopy and improve sunlight exposure.
It is a labour-intensive but highly effective approach to vineyard management, demonstrating how decisions in the vineyard can directly influence grape development and wine quality.

Hops are an essential part of brewing - but when we add them matters just as much as what kind we add.
While hops added during the boil contribute bitterness, dry hopping focuses on something different: aroma.
By adding hops during or after fermentation, brewers can preserve delicate aromatic compounds that deliver notes of citrus, tropical fruit, pine and flowers. It's a technique that has become synonymous with modern craft beer, particularly hazy IPAs and double dry-hopped styles.
