The Livewell health check team was proud to attend the official opening of ALSTOM's new Work and Wellbeing Suite today at the company's Derby Litchurch Lane Works πŸ©ΊπŸ’š where we delivered blood pressure checks and shared information about our free services with staff.

A big congratulations to Alstom’s Derby Wellbeing team πŸ‘ for creating such a valuable space and resource for colleagues to use. We were also pleased to hear about the important su***de prevention training taking place within the organisation πŸ’› and to have the opportunity to have a photo with the Baton of Hope πŸ….

This colourful bean salad is packed with flavour, easy to prepare, and perfect for warmer days β˜€οΈ Shared by Christine from our Customer Contact Team, it's a simple way to enjoy a healthy, protein-packed meal without spending a fortune πŸ™Œ

πŸ’š Cheap, filling, and great for meal prep!

**Ingredients**
πŸ₯« 1 can mixed beans, drained
🌽 1 can sweetcorn, drained
πŸ«› Handful of green beans, trimmed and chopped
πŸ§… 1 red onion, finely diced
πŸ… Cherry tomatoes, halved
πŸ‹ Juice of Β½ lemon
πŸ₯„ 1 tbsp Dijon mustard
🍯 1 tsp honey
πŸ‡ 1 tbsp balsamic vinegar
πŸ§„ Β½ tsp garlic granules
πŸ§‚ Salt to taste

**Method**
1️⃣ Boil or steam the green beans for 3–4 minutes until just tender, then leave to cool.

2️⃣ In a large bowl, combine the mixed beans, sweetcorn, green beans, red onion and tomatoes.

3️⃣ In a small bowl, whisk together:
β€’ Lemon juice
β€’ Dijon mustard
β€’ Honey
β€’ Balsamic vinegar
β€’ Garlic granules

4️⃣ Pour the dressing over the salad and mix well.

5️⃣ Leave for 10 minutes before serving to allow the flavours to combine.

Cajun Chicken Salad with Tzatziki πŸ₯—πŸ”₯

This quick and simple dish, ideal for a light summer meal 🌞, is a family favourite from Julie in the Livewell Customer Contact Team πŸ‘©β€πŸ³. The Cajun spice adds a little kick 🌢️, but a spoonful of tzatziki will cool you down ❄️. Julie used shop-bought tzatziki, but you could of course make your own! πŸ₯’πŸ§„

Serves 4 πŸ‘ͺ

You will need:
πŸ₯” 400g baby new potatoes, sliced
πŸ— 3–4 chicken breasts, cut into thin strips
🌢️ 1 tbsp Cajun or Piri Piri seasoning
πŸ«— 1 tbsp oil
πŸ₯¬ 1 bag herb salad leaves
πŸ§… 1 red onion, thinly sliced
πŸ₯£ 1 pot tzatziki

πŸ‘©β€πŸ³ Method:
1️⃣ Cook the potato slices in lightly salted water for 8–10 minutes until just tender. Drain well.
2️⃣ Place the seasoning and chicken strips in a clean, dry plastic bag and shake well to coat the chicken.
3️⃣ Heat a little oil in a large frying pan and fry the chicken for 3–4 minutes on each side until cooked and golden brown. Transfer to a plate lined with kitchen paper.
4️⃣ Place the salad leaves in a large serving dish, scatter with the warm potato and onion slices, then top with the spicy chicken.
5️⃣ Serve with a spoonful of tzatziki.
