Darjeeling has a long and storied history of tea production, dating back to the mid-19th century when the British East India Company sought to establish an alternative to Chinese tea. The region's unique terroir and altitude, ranging between 3,000 and 6,000 feet above sea level, contribute to the distinct flavor profile of Darjeeling tea, often referred to as the "Champagne of teas."

Today we go to the dark Continent with my Rooibos a tasty, aromatic, herbal tea that's completely caffeine free named after the area in South Africa where the original commercial cultivation of Rooibos took place. Fine needle like green leaves from the Aspalathus Linearis plant are harvested and fermented; a process that sees the leaves change from green to deep red. The resultant Rooibos leaves produce a very characteristic flavor and sweet aroma that can be enjoyed on their own or as part of a blend. Delicious with or without milk and sugar.

The beauty of Earl Grey is that it makes a wonderful mixer for cocktails. This is a simple and sophisticated Earl Grey Tea cocktail made with Grand Marnier and garnished with a sprinkle of tea leaves.
1/2 cup of water
1 tsp Earl Grey Tea
1/4 cup Sugar
1 1/2 ounce of Grand Marnier
1/2 ounce Lemon juice
Directions
1. Bring water to boil in a small saucepan.
2. Add Earl Grey tea leaves and infuse for 4 minutes.
3. Add sugar and stir to dissolve.
4. Set aside to cool.
5. Fill a cocktail shaker with ice. Add Grand Marnier, and lemon juice.
6 Add the sweetened tea shake and pour into a cocktail glass.

Yarba Mate & Ginger is an easy iced tea with a little zing from the ginger and honey.
2tbsp yerba mate leaves
1/2 tsp grated ginger
500ml hot water @ 90c
1 tsp honey
Ice cubes
Place the leaves and ginger in a teapot. Add the hot water , steep for 5 minutes .
Strain into a jug . Add the honey and stir, leave to cool and chill in the fridge.
Serve it up in a glass ice cube optional.

Todays offering is Moroccan Mint Tea, Gunpowder green tea is the key ingredient, this drink has become the symbol of hospitality in Moroccan homes.
4 tsp Gunpowder Tea
6 large leave of mint plus 4 more for garnish
900ml water heated to 90c
5 tbsp sugar
Place the tea leaves and mint leave in a teapot add the hot water, infuse for 5 minutes
Strain the tea into a saucepan add the sugar. Stir and bring to a simmer. Remove from the heat and pour the sweetened tea back into the teapot.
Pour into cups from a height to create froth on the surface serve with a mint leave as garnish .

Todays offering is Rosy Citrus Frost
1 tsp dried Hibiscus Flowers
8 whole Rosehips
3 Cloves
1tsp Orange zest
500ml boiling water
4tsp Honey
Ice cubes
Garnish of Orange or Lime slices
Place the Hibiscus and Rosehips in a teapot with the cloves and zest.
Add the hot water then leave to steep for 4 minutes
Strain into a glass Jug add the honey and stir . leave to cool .
Pour into a glass filled with ice cubes then garnish with the slices .

Today we have Iced Lime Mate. It has a slightly bitter taste, the Liquorice sweetens with the lime harmonizes the flavor.
2 tbsp Yaber mate leaves
1/2 tsp ground liquorice root
2 lime slices
1tsp lime zest
500ml boiling water
Ice cubes
Place the leave liquorice and lime zest in a tea pot. Add the hot water , infuse for 5minutes.
Strain into a glass jug then leave to cool.
Pour into a large tumbler add ice cubes stir garnish with slices of Line.

Hi Try this 1 if you can. Honey Lemon Matcha Iced tea.
5tsp honey
1 tbsp lemon juice, plus some zest
500ml water heated to 80c
1 1/2 tsp Matcha powder
ice Cube
Place the honey, lemon juice & zest, and half the hot water in a jug.
Put the matcha powder in a bowl and add a little of the remaining water. Whisk the matcha to a form. Add the remaining water whisk again .
Pour the matcha mix into the jug, stir and serve in glass with ice cubes .

Here we go for today Health benefit's of Black Tea ?
A study conducted by the Netherlands National Institute of Public Health found a correlation between the regular consumption of black tea and the reduced risk of stroke. The study concluded that the flavonoids in black tea helped reduce the production of LDL ("bad") cholesterol that can lead to stroke and heart attacks. The study also indicated that those men who drank over 4 cups a day had a significantly lower risk of stroke.
Whilst research into all types of tea continues, there's significant support to suggest black tea is indeed a healthy beverage. We know the quality of Harrison Teas will provide you with an excellent cuppa any time of day, so pop the kettle on and enjoy!

Here we go with a Sunday bonus.
To make premium jasmine tea, it is important to begin with high-quality green tea hand-plucked during the spring months in Fujian Province, China.
Equally important are fine jasmine blossoms, ones with the most intense aroma that bloom in May.
Jasmine flowers only bloom after the sun goes down and around midnight the fragrance is at its peak. This is when the buds need to be picked to impart their superior flavor. By morning most of the fragrance disappears, but if the tea maker has done their job correctly, this heavenly scent has been captured in time.
Traditionally layers of jasmine blossoms were placed between fine green tea. In time the intense and uplifting fragrance of the jasmine blooms is passed on to the tea.

Hi Folks here we go with part 3 & 4
Pan Firing - the time the leaves are pan fired is determined by the skilled tea master and will depend very much by the conditions under which the leaves were grown. The timing of the pan firing ultimately determines the teas quality. The leaves are put into a pan firing machine which stops further oxidation (or fermentation) from occurring.
Rolling - After pan firing, the leaves are placed under rolling machines that will cause the tea leaves to become tightly rolled.

I am going to change it up for the next few days, I will be highlighting the 7 stages of making Oolong teas.
Stage 1 & 2
Solar withering - At around midday, the famers place the freshly plucked leaves out in the sun to wither for about 10 - 30 minutes. This will evaporate some water from the leaves.

Indoor withering (about 8% - 25% oxidation) - the leaves are then placed on bamboo plates indoors to continue the oxidation process (or fermentation as it's also called). The leaves are stirred twice by hand every 1!/2 - 2 hours and a further 2 times by machine. After 8 - 10 hours the withering process is complete and the fresh green leaves will have started to change their colour and produce a wonderful flowery aroma.

Grown at high altitudes it has a classic Kenyan profile of being gentle and astringent yet with notes of malt, currant and moist earth. Today we have our Young Pu erh tea that is broken up from tea cakes which contain tea leaves that have been picked, rolled, withered in the hot sun and then steamed and pressed. It is of course, the steaming process that generates the moisture that is responsible for the musty and earthy characteristics of Pu-Erh Tea. Full bodied strength, earthy and musty in character.

Today we are going with a great Oolong tea my, Orange Blossom Oolong is a wonderful combination of a high grown Oolong from the Tungting region in Taiwan, an exquisite Ceylon Tea from Sri Lanka, Jasmine petals and naturally dried orange peel. Together they create a truly magical taste experience, one that can be explored through multiple infusions.

Orange Blossom Oolong makes a great iced tea using traditional methods, but also works really well as a cold brew tea.

Bad New Following the charges to the pitch fees at Riverside Markets I am left with no alternative but to pass on the 10% uplift in charges .
So from 1st April at Riverside markets the price of my teas will now be increased to £7 per 100g .
To beat the price increase order or purchase that tea you are looking for before the 1st April
I am attending Riverside on the 23rd and Roath on the 30th where for the time being prices are staying low.
