Ingredients
Bacon
Olive oil
White onion
Carrot
Celery
Ground beef
Tomato paste
Tomato juice
Water
Red grape vinegar
Milk
Pasta
Pasta water
Parmesan
Fresh basil
Start by cooking the bacon in a pan until it releases its fat
Add olive oil, then onion, carrot, and celery and cook until slightly softened
Add the ground beef and cook until browned and dry
Add a splash of red grape vinegar
Stir in one tablespoon of tomato paste
Add tomato juice and a bit of water
Let it simmer on low heat for about 3 hours
Add a splash of milk towards the end
Cook the pasta and transfer it to the sauce with some pasta water
Let everything cook together for a minute
Finish with parmesan and fresh basil

and honestly, I said no.
But today I tried and turns out, I’m actually great company 🥞✨
So I made these brown butter pancakes… and stayed.
Ingredients (yields 6 pancakes):
- 1 cup flour
- 1 1/2 tbsp sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1 egg
- 1 tsp vanilla
- 2 tbsp butter (browned)
Syrup (makes extra, store in fridge):
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/2 cup maple syrup
- 1/2 cup buttermilk
- 1 espresso shot
- pinch of salt
- 1 tsp vanilla
- 1/2 tsp baking soda
Steps:
Mix dry ingredients.
Whisk wet ingredients + browned butter.
Combine both (don’t overmix).
Grease pan with butter.
Add two scoops of batter.
Cover on low heat until it starts bubbling from the top.
Flip and cook the other side.
For the syrup: mix everything except vanilla and baking soda.
Remove from heat, then add them it will bubble.
And that’s it… soft, cozy, and worth sitting down for 🤍

Leftover chicken just had a glow up 🔥
4-ingredient buffalo chicken dip
Ingredients:
• Boiled chicken (shredded with hand mixer)
• Buffalo sauce
• Cream cheese
• Mozzarella cheese
Instructions:
1. Shred the boiled chicken using a hand mixer.
2. Add buffalo sauce and cream cheese, then mix until creamy.
3. Fold in mozzarella cheese.
4. Transfer to a baking dish and top with more mozzarella.
5. Bake until hot, bubbly, and golden on top.
That quiet feeling of being safe, held, and taken care of.

I don’t really eat it anymore, but today I made it again… just to revisit that moment, with a little twist in how I plated it.
Ingredients:
½ cup sugar
1 cup boiling water
1 cup flour (I used ½ flour + ½ semolina for extra crunch)
½ cup ghee
Recipe:
Dissolve sugar in boiling water
In a pan, toast the flour + ghee on medium heat until golden and nutty
Add the sugar water gradually, mixing continuously
Keep stirring until it forms a soft dough-like texture
Finished with molasses, ice cream, and walnuts ✨
