Meet the team ⭐
The two minds behind Alimentum, Søren and Urth
Søren is the founder, owner, and head chef at Alimentum. He opened the restaurant back in January 2019 and has since shaped it into what it is today. 🚀
Søren is a bundle of energy who always keeps the spirits high, and he also loves a good cup of coffee — especially during service. He comes from Flauenskjold, north of Aalborg, and now lives in Hasseris with his wife and three children. Fun fact: Søren can this year celebrate 20 years in the restaurant business! What an achievement! 💚
Urth started as an apprentice at Alimentum in January 2023 and has since worked his way up to where he is today; restaurant manager and Søren’s partner. 🙏🏻
Urth focuses strongly on the service provided in the restaurant and always puts the guests first. He is currently enrolled in the sommelier program at the Danish Sommelier Education to further enhance the guest experience. He is originally from Viborg but now lives in Aalborg. Fun fact: Urth is a former danish- and nordic champion for waiter apprentices! 🤩

Celebration! 🤩
Today we got an unexpected visit from who works together with in delivering nomination-plaques for all the nominated restaurants, in this years version of the guide 🔥
We’re incredibly honored to be, for the second year running, nominated for having the best Non-Alcoholic Menu. We put great work in to making our Non-Alcoholic Menu, making sure that it matches equally as good as the wine menus! 🙏🏻
A huge thanks to .christensen.54 and the rest of delegation, for nominating us, we’re deeply honored and can’t wait for the galla! 😍

Today the team went to to help out Morten, with planting and sowing for the summer 👨🏼🌾
We do this once in a while to help out Morten and make sure that the whole team, has an understanding of how we get our produce and how the farm works 🤩
It’s good teambuilding and a lot of hygge - most of all it’s great to bring the team together and have a nice day in the sun! ☀️

Meet the team ⭐️
The two gears that keep everything turning — the two you don’t see, but who play a huge role in making everything run smoothly during service! 🙏🏻
The two dishwashers, Lukas and Emil, keep things running behind the scenes every day by making sure the cutlery is polished, the plates are clean, and the coffee is ready by 9:00 PM 🫡
Lukas is from Nibe and graduated last year from Hasseris Gymnasium. He is currently taking a gap year, which we are extremely grateful he is spending with us. He has drive, determination, and the ability to work quickly and with control during a busy service 🫵🏻🔥
Emil is from Aalborg and studies at Handelsgymnasiet Saxogade. He is new to the profession but works hard and has a great instinct for keeping things clean and ready for use… and he is always willing to lend a helping hand, no matter the task. As a little bonus fact, he is the son of the head chef and owner, Søren — but who says that’s an advantage 😜
We love these two guys, and wouldn’t go without them 💚

Meet the team ⭐
This is Morten, the shadow warrior, the danish Alex Honnold, the batman of Alimentum, and most of all; our farmer 💚
Morten came to Alimentum back in september 2020 all by himself, and asked if we wanted a farmer for our restaurant - and ever since he has grown into becoming the core of Alimentum 🤩
Many have asked why we don't advertise our menu anywhere, and there is a simple answer; sometimes the menu changes from day to day - but really; it's Morten who decides what is on the menu (don't tell Søren) 🤪
Morten is a educated farmer with a degree in organic vegetables 🍅🥒🥕

Spring is here 🌱
After a long winter, we currently find ourselves in a season where small new shoots are emerging from the ground, while we still make use of winter's root vegetables and preserves. Here, we have created a dish that perfectly captures this moment in the season;
Gigas oysters with raw shrimps and preserved tomatoes, served alongside a fresh salad of farmed and wild herbs dressed in a vinaigrette made from fermented tomato juice and blackcurrant branches - served ice cold! 🥶

Meet the team ⭐️
A chef to be and a freshly educated chef
This is Aske and Rasmus; Aske started his adventure at Alimentum the 1st of July 2025 and has grown to become a responsible, caring and hard working chef AND a very important member of the team 🔥
Rasmus started at Alimentum the 1st of November 2025 and is just a pure bomb of happiness, a very talented chef with lots of ideas and we are very proud to be able to bring chefs from all over the Kingdom, to small Aalborg to cook for you guys 🥰
Aske is local guy from Gug, a part of Aalborg 💚 Rasmus is originally from Hammel, in the middle of Jylland, but has been working mostly in Copenhagen 🇩🇰

A savory egg custard, made from eggs from the good people Thomas & Frederikke at - we serve it with sustainable farmed eel from Skovsted Eel Farm, grilled duck hearts from , Gold Caviar from and small herbs from Morten at - as a finish, we serve it with a dashi infused with eel skin, toasted seaweed and pickled ginger 🤩
