Last night i did seared scallops on a butternut squash purée with a pancetta and butternut squash risotto and candied some walnuts for texture.

Day.... i don’t even know anymore lol. I made Sweet N Sour Pomegranate Chicken. I toasted some Persian spices (cumin, caraway and coriander seeds) then ground them to season and cook the chicken. (Pan seared and oven finished) Then used some pomegranate molasses, orange juice and powdered sugar for the sauce. Nice balance of Sweet vs Savory.

Broke my Mountain Bike 🍒 Early morning ride with some new friends. I was super out of shape but so excited to get out and ride! 🤙🏼🚵🏼 @ Landmine Loop Trail
