Johannisbrot - die vielseitige Unbekannte
Der Anbau von Johannisbrot hat im mediterranen Raum eine lange Tradition. Die Wildform stammt vermutlich aus Arabien, kultiviert wurde der Johannisbrotbaum, auch Karobbaum genannt, jedoch schon von den alten Ägyptern im 2. Jahrtausend v. Chr. Der Baum wird bis zu 500 Jahre alt, ist extrem genügsam, wächst auf trockenen, kalkhaltigen Böden ohne Bewässerung, ist resistent gegen Salz und kann somit auch in Küstenregionen kultiviert werden, die ansonsten wenig landwirtschaftlich nutzbar sind. Seine tiefen Wurzeln schützen den Boden vor Erosion, seine ausladende Krone spendet Weidetieren im Sommer Schatten und bietet vielen Wildtieren ganzjährig ein Habitat, da er im Winter die Blätter nicht abwirft. Die Ernte erfolgt in reiner Handarbeit, da Stamm und Äste des Baumes aufgrund der trockenen Bedingungen hart und unflexibel sind und der Baum durch Rüttelmaschinen stark beschädigt würde. Die Früchte werden deshalb mit Stangen von den Bäumen geschlagen. Die Kultur des Johannisbrotbaums ist also im gesamten Zyklus sehr nachhaltig.
