We roast delicious, open, and honest coffees from some of the best producers in the world. Populus means people and community, and to us relationships are what makes specialty coffee so special to us. Populus thrives on establishing a coffee supply chain that creates value for everyone involved in the process of making a seed of the Coffea Arabica tree to taste like a rainbow in your cup. We are all about exploring the incredible diversity in specialty coffee and presenting it to you.

Populus x Zacharias Summer Cupping ☀️☕️

We are joining our friends at Zacharias for a summer cupping.

This event is a part of our 10 year anniversary tour around Europe as well as our celebration of our head roaster Ellie's ( ) win of the German roasters championship.

On the table you will find coffees from people we have been working with even before we started roasting. We are also bringing some special release lots in preparations to follow Ellie on their way to compete at the World Championships in Brussels later this month.

We are cupping coffees from:
Santa Bàrbara, Honduras
Incahuasi, Peru
Yirgacheffe, Ethiopia

This weekend we are traveling to Bratislava to take part at the .different_festival . We'll be brewing and cupping amazing, bright and juicy coffees for the whole Saturday and Sunday at our stand. Come say hi and taste our coffees. ☕️🙌

Joel Gonzales - Honduras

Bright and sweet natural processed Geisha by Joel Gonzales from Las Vegas, Santa Bárbara, Honduras. Full of delicious flavours of stone fruits, mixed berries and black tea with white floral and sweet herbal undertones.

Joel Gonzales is a true farmer at heart. He inherited lower-altitude farms from his father, where he grew conventional coffee, and over time built an exporting business for bananas sourced from local smallholders. In 2020, he took a bold step into specialty coffee, purchasing a high-altitude farm, Los Gatos, dedicated entirely to high-quality coffee.

Los Gatos sits at 1,400 meters above sea level and is planted with 2 manzanas of Geisha and 1 manzana each of Parainema and Pacamara. The farm experiences cold, humid air that slows cherry maturation. In moderation, this stress pushes the plants to develop complexity, producing coffee with refined acidity and layered flavors.

This region, the producers, and the coffees have a special meaning to Populus, as it’s the place where the idea of working with specialty coffee was born after meeting the people, seeing how specialty coffee can be traded directly and tasting these coffees.

Ariel Gomez - Honduras

Juicy cup with notes of stone fruits, mixed berries and black tea. Anaerobic washed Catimor variety from Ariel Gomez’s farm, Finca Vertical in El Dorado, Santa Bárbara, Honduras.

Ariel is a motivated and dedicated coffee producer who cultivates multiple varieties on his farm, he acquired from a colleague and friend, Arturo Paz. In addition to producing coffee he works as a junior Agronomist at San Vicente, our partners in Honduras and one of the most sough-after specialty coffee exporter. We met Ariel for the first time a few years ago and this is the second year we are buying coffee from him.

This region, the producers, and the coffees have a special meaning to Populus, as it’s the place where the idea of working with specialty coffee was born after meeting the people, seeing how specialty coffee can be traded directly and tasting these coffees.

This lot, is roasted especially for another long-term partner of ours. Sofi the bakery, with whom we have been working closely together since 2021. You can find it on their batch brew as well as their shelves and online shop.

Samuel Espinosa - Peru

Refined and fresh, washed Typica from Samuel Espinosa’s farm, Finca Tarcuyuc in Incahuasi district high in Peru.

Samuel is a new partner for us, whom we met through our old Peruvian partners, APU Coffee, exclusively working with the Incahuasi district, where we visited for the first at the end part of 2025. Traveling to this district is a two-day trip by car from any of the closest airports on a wild, serpentine roads climbing well above 4000 meters.

In Incahuasi everyone farms organically, adding only seabird guano as a fertiliser. The farms share characteristics with some Ethiopian forest farms, with low-intervention cultivation and an abundance of shade trees. The best performing varieties are mainly Geisha, Typica, a natural mutation named “Americano”  and an as-yet-to-be-genetically-determined SL-9 mutation that many producers refer to as Geisha Inca.

Samuel’s farm sits at an elevation of 2110 meters where coffee trees are subjected to colder temperatures and more stress. This leads to increased sugar levels and more complex acids to develop contributing to clean and fresh cup notes with fruity acidity and complex flavor notes.

The first non-binary roasting champion of Germany: ellie dunlop ( )

This amazing person joined our team around two years ago with a few months of roasting experience and determination to learn more. Within a year they became our head roaster and now that determination has lead them to earn the titel of the German Roasting Champion 2026 as well as a spot to represent Germany at the 2026 World Coffee Roasting Championship in Brussels. 🙌💪

They are the first non-binary person to win this title as well as the first non-cis male. Together with their amazing coach they are also the first non cis-male duo to take this title home.

We couldn't be prouder of them and having them in our team, to work with them and having them as a friend.
