Chashu Lover Ramen
This bowl exists because we noticed something:
Guests kept ordering extra chashu. Every single time.
So we made a version with four thick slices of pork belly.
No shortcuts. No tenderizers. Just pork, soy, mirin, and time.
The chashu is rolled, braised for 4 hours, then left to rest overnight.
When sliced, each piece shows a dark amber rim and a rosy center.
This is not a bowl for everyone.
