This is a great example of the differences between conventional (non-organic) and organic produce. The top lemon is conventional and the bottom is organic; both were cut right through the middle. Right away you can notice the difference in size, the conventional lemon has a lot more pith (white fleshy part of the lemon) than the organic lemon, this is because conventional lemon producers try to maximize the size and weight to make consumers think that the lemon has a lot of juice and also to maximize the price as lemons are often sold by weight. Another difference is that the conventional lemon has no seeds compared to the organic lemon, this is because some conventional lemons have been genetically modified to prevent lemons from growing seeds as producers know that seeds are an inconvenience to consumers. On the other hand, you could probably sprout the seeds from the organic lemon and grow a tree. Lastly, there is a difference in color, the conventional lemon is bright yellow on the inside while the organic lemon is yellow-greyish, this is because conventional lemons have been genetically modified to give them that bright yellow colour that catches consumers’ eyes and make them think that the lemon is extremely fresh but we all know it was likely cut months and months ago. Although organic produce is more expensive than conventional produce, it is better for your wellbeing to buy organic. Your body will appreciate it.

We love, love, love bread! We baked this almond flour and flax seed bread, it turned out amazing! All organic and gluten free ingredients used. Paired it with different home-made spreads; black bean spread with chimichurri (surprisingly a great combo), guacamole and our new favourite beet and garlic hummus.

The meal itself is not the cause of your spikes in blood sugar, it is the processed and simple carbohydrates in the meal that cause your blood sugar to spike and crash rapidly making you feel groggy, tired, and moody. The solution: eat more whole foods including complex carbohydrates.

This is our Viking’s dinner minus the booze. At Magnus Essen, we try to eat as much protein as we can as it keeps us strong, focused, and satiated. Braised organic lamb shanks with a simple salad to balance it all out is the perfect combination; this salad had greens, avocado, green onions, and cherry tomatoes. It took hours to cook the lamb but it was totally worth it!

Produce Highlight of the Week: the king/queen of baby carrots. This is by far the smallest carrot we have ever seen: 4 inches or 11 centimetres.
At Magnus Essen we love produce with small appearances but mighty personalities and outstanding nutritional value.
