Chef’s feature this weekend: house-made empanadas, crisp on the outside, soft and fluffy in the centre, stuffed with cheese and built to disappear fast.

Finished with salsa avocado verde, crema, crunchy slaw, and plenty of cotija for the perfect balance of richness, freshness, and texture. An ideal start to the table… or honestly, keep them all to yourself.

This month’s is the beautifully wild La Venenosa Tabernas III — Los Hermanos. Rustic in all the right ways, with earthy agave, soft smoke, savoury minerality, and a finish that just keeps evolving in the glass.

Raicilla remains one of Mexico’s best-kept secrets, a regional agave spirit from Jalisco that still feels deeply connected to tradition and place. Untamed, complex, and endlessly interesting.
