This oak came from a backyard arbor we sourced through a local arborist , carefully removed, respectful of the tree, and far from the industrial logging of old-growth forests that still scars much of the Island. By choosing small, local sources, we know where the wood comes from, support sustainable practices, and keep our fire conscious.

Ever heard of โAsado a la Cruzโ?
Itโs more than just a barbecue technique, itโs a primal ritual, a gaucho tradition that connects you straight to the wild essence of Patagonia, Argentina. ๐ฆ๐ท
Back in the day, the gauchos, nomadic horsemen travelling vast and free lands, didnโt have kitchens or grills. When they secured an animal, they cooked it whole using the most resourceful, practical method available.
๐จ Gaucho Ingenuity at Its Finest:
Sturdy branches or an iron cross planted firmly in the ground, the lamb (or whatever they had) secured but Patagonia brings one extra elements: strong winds. ๐ฌ๏ธ Unlike typical BBQ methods that rely only on embers, here the wind becomes the ultimate ally, pushing the heat of the bonfire across the meat for a perfectly even cook.
This is a ritual of patience, slow cooking for 4, 5, 6 hours. The result? Meat thatโs tender, juicy, and infused with a smoky flavor that fall off the bone.
โAsado a la Cruzโ isnโt just cooking, it celebrates community, patience, and a deep connection to the land and the elements. Itโs a reminder that the simplest techniques, born out of necessity, often create the deepest flavors.

In September we came together with for an event collaboration.
It looked like the sky was about to fall, but the rain never came and had a beautiful day ๐
Laughter, good people, and the kind of ingredients that remind you why we cook.
Everything came from the farms around us and grown by people who truly care about the land.
That day felt like a reminder of what food can be when itโs made with heart and shared around the fire.
Next stop, fire keeps moving.
