We haven’t really talked about one of our recent releases yet: Colombia Pink Fruits Co Fermented from Sebastián Ramírez at , Colombia.
In the cup, this coffee is intensely expressive yet beautifully structured. It opens with notes of watermelon, jasmine, and red apple, supported by layers of candy like watermelon sweetness. As it develops, rosé, honey, guava, lychee, dragon fruit, and cucumber emerge, followed by a subtle floral finish that brings balance and depth.
Produced by fourth generation coffee producer Sebastián Ramírez, El Placer has become known for its precise approach to advanced fermentation and co fermentation. Rather than overwhelming the coffee, these techniques are used to expand flavour expression while preserving clarity and structure.
What makes this coffee especially interesting is El Placer’s philosophy behind it. Fermentation is not treated as a gimmick, but as a tool, a sensory amplifier rather than a dominant force. The result is a coffee that is bright, silky, and dynamic, with layered sweetness, lifted florals, and a clean, refreshing finish.

New lot releases available at the studio beginning Sunday, June 7. ☕️❤️🔥🇨🇦
This unique lot comes from Kochere, one of Yirgacheffe’s most celebrated growing regions. Following harvest, the cherries undergo a rare 200-hour Jasmine Co-Fermentation with fresh jasmine flowers before being carefully washed and dried. The result is an exceptionally aromatic coffee that showcases floral elegance while preserving the clarity and vibrancy of a classic washed Ethiopian.
In the cup, delicate jasmine blossoms lead into notes of White Peach Oolong and Longjing tea. Bright pomelo and soft citrus bring freshness and lift, while honey-like sweetness carries throughout. As the coffee cools, subtle hints of mangosteen emerge, creating a refined, tea-like cup with remarkable elegance.

Late night roasting to stock up our whole beans for the weekend.
Pairing with our 2026 Red Fruits Co-fermented EA Decaf from In the cup, it reminds me of iced strawberry and blackberry juice, followed by a soft hint of milk chocolate.
Definitely one of those coffees that makes long roasting nights a little more enjoyable. 🍓
