BANANA CAKE με Χαρουπάκι

3 ώριμες μπανάνες
2 αυγά
170 γρ. μέλι
140 γρ. Χαρουπάκι Ερωφίλη θρυμματισμένο
20 γρ. μπέικιν πάουντερ
100 γρ. καρύδια
Εκτέλεση

Καθαρίζουμε τις μπανάνες και μεταφέρουμε σε ένα μπόλ, πολτοποιούμε πολύ καλά με ένα πιρούνι.
Προσθέτουμε τα αυγά, το μέλι, και ανακατεύουμε με ένα σύρμα.
Ανακατεύουμε μέσα στο θρυμματισμένο Χαρουπάκι το μπέικιν πάουντερ και ρίχνουμε σταδιακά μέσα στο μείγμα ανακατεύοντας απαλά.
Προσθέτουμε τα καρύδια θρυμματισμένα και ανακατεύουμε.
Σε μια φόρμα τοποθετούμε μια λαδόκολλα και αδειάζουμε το μείγμα.
Ψήνουμε σε προθερμασμένο φούρνο στους 180 βαθμούς στον αέρα για 35-40 λεπτά.
Αφαιρούμε το μπανάνα bread από τον φούρνο, το αφήνουμε λίγο να κρυώσει και σερβίρουμε.
