Thank you for continuing to use my recipes and pieces of advice over the course of last year. I hope that it continues to inspire and motivate you to cook new things, make healthier and smarter choices and live life the way you want to. I received a phone call last week from someone who was looking for a Health and Wellness Counsellor. Unfortunately, I am currently in treatment for breast cancer. My last chemo is scheduled on Friday (so exciting) and I will be having multiple surgeries next year, both breast and gynochological as I tested positive for BRCA1. Pre-dinner tip: when you're hungry before dinner, always have cut up veggies and hummus on hand. Healthier than grabbing chips or other unhealthy munchies.
My quick and easy lunch: Simple Greek Salad and Sea Bass .
Buy pre-cut Romaine, cut up a mini cucumber and red pepper, throw in kalamata olives and crumble up some Feta. Drizzle olive oil, red wine vinegar, cracked pepper and garlic powder. I bought my Sea Bass at Bruno's-it comes with a marinade that is really delicious. Bake at 375.
Granted Greek Salad and Sea Bass may not be a normal food pairing, but it was healthy and delicious nonetheless.
