#Pizzoccheri are a luscious Valtellinese dish. It looks like buckwheat flour noodles which are cooked with cabbage and potatoes, and seasoned with plenty of butter and the famous local cheese Valtellina Casera DOP. Valtellina isn't known only for #Pizzoccheri: this valley is a region very famous for its cold cuts, especially Bresaola, for Polenta Taragna (mix of mais and buckwheat flours blended with Valtellina Casera DOP), for cheeses ("Bitto" is the king) and for wines (like "Sforzato"), among the best in Italy. At STELVIO you can also eat the famous "#sciatt" ("frog" in local dialect): fried cheese in small buckwheat balls, served in a cone. It's a great snack or even a starter. You can also try the "zigeuner", which are ribbons of beef sirloin rolled up on a wooden stick, which is then roasted, giving the meat a nice small flavor of the wood.
