It was always Jacques-Alexandre Paquet’s dream to own a restaurant. As a graduate of the Culinary Arts program at Montreal’s l’institut de tourisme et d'hôtellerie, his passion for all things food was his driving force. But something happened on the way to achieving that dream — he found his calling in the hotel world through an internship program at the Alt Hotel Quebec. The year was 2008 and Paquet started as front-desk supervisor. “I was curious and wanted to work in a hotel so I would have a better understanding of operations. I was also intrigued by Germain Hotels and its personalized service. My goal was to work there for four months and apply what I learned in a restaurant. After 18 years, I am still there: j’ai eu la piqûre (I was hooked) as we say in French. ”
