Do you have fresh greens from Sechelt's Farmers Market? Try dressing them with this light and tasty combination:
CRANBERRY PEAR WHITE BALSAMIC VINEGAR and BLOOD ORANGE OLIVE OIL from TASTERS
Entertaining this weekend? Looking for an alternative to the traditional? Try SCALLOP PASTA with a tossed green salad. It is quick, easy and sure to impress.
SCALLOP PASTA for TWO
saute 1 c chopped cherry tomatoes
1/2 c chopped white onion
3 large garlic cloves, minced
2 generous Tbsp SOUTHWEST LIME olive oil or Extra Virgin Olive Oil from Tasters
Set aside
Cook pasta (penne or fettuccine) as per package directions
While pasta is cooking:
in skillet over high heat sear 8 scallops in 3 Tbsp (more if needed) GARLIC OLIVE OIL from TASTERS
When pasta is ready drain and fold into sauted tomato mixture.
Saute for one minute. Top with scallops. Garnish with chopped parsley.
The tried and true family dinner at this time of year often includes a ham. The following glaze is sure to impress:
2 tbsp KALAMATA (or other) EXTRA VIRGIN OLIVE OIL from TASTERS
1/2 cup MAPLE DARK BALSAMIC VINEGAR from TASTERS
1/4 cup maple syrup*
2 shallots, minced
2 garlic cloves, minced
1 tbsp thyme
1 tbsp rosemary
3 tbsp dijon mustard
2 tbsp lime juice
1 tsp salt
1/2 tsp cayenne pepper
*No maple syrup? Don't worry, increase the amount of dark maple balsamic vinegar
Mix all ingredients until well combined. Spoon over your ham. Cook as per instructions for ham. Baste frequently with glaze until ham is cooked. Enjoy!
