Our Cooking Outreach team has been busy turning surplus food into nutritious ingredients for future programs—all while reducing food waste and food costs! 💥

Thanks to grant funding, we purchased a Thermomix, which helps us efficiently transform and preserve excess fresh ingredients from our programs and Community Market.

So far, we've made:

🍅 Tomato Sauce from surplus tomatoes from our Chefs in Training program, plus other vegetables from the Community Market that were at risk of going to waste
🧅 Vegetable Stock from excess onions, garlic, and other vegetables from Chefs in Training
🍏 Apple & Pear Sauce from surplus apples and pears from Chefs in Training
🍓 Blueberry & Raspberry Jam from 44 clamshells of berries from the Community Market that were at risk of going to waste

Made entirely from whole foods, these preserved ingredients will be used in our Cooking Outreach programs—improving food access and nutrition for children and community members while reducing waste and stretching our food budget further. 💪👩‍🍳

Pretty cool, eh? 😎

How are you reducing food waste and saving money these days? Share your tips in the comments! 👇

Fish-powered and ready to grow!🐟🌱

Over at our ketayak garden, we have been prepping our 4 beds of 3 Sisters! Last week, our Urban Ag staff were out burying some fish from our friends over at Hooked Fish & Seafood to give the soil a healthy boost. This week we will be direct seeding our corn and transplanting our squashes!🌽

💡 Did You Know?

*3 Sisters (known as milpa in the south) is an ancient planting method that reflects ancestral wisdom. Corn, pole bean and squash grow so well together because they all mutually benefit from the characteristics of the others.

*Can be grown as an entire field, or adapted to a patio garden with the selection of dwarf varieties.

🔥 Let us know in the comments if you have ever used fish for soil amendments and/or planted 3 Sisters!👇
