Atlantic salmon tonight. Baked in the oven in lemon butter and garlic. With lemon zest! Coconut rice, sautéed carrots, onions, ginger, and broccoli with sesame oil and cashews.
Then I used left over mashed potatoes and re-mashed them with butter, milk and cheese. Dill& parsley. Put that on a layer of spinach. It was fresh and flavourful.
A good way to make the most of your groceries. Eliminate waste and LOVE your leftovers.

I thought of making a Lemon Loaf with lemon glaze today. Something my Mom made a lot. This has all fresh juices, ingredients and ZEST. Put some back in your life and on your table. So good!

Not eating your greens? Give this a try. Easy to make and great on a hot day where the stove will not be used.
Caesar Salad! Make your dressing from scratch. Buying dressing off the shelf just is not the same.
You will need a big salad bowl and romaine lettuce.
Make the dressing in the bowl. Start with fresh minced garlic, olive oil, lemon zest, lemon juice, dijon mustard, mayonnaise, anchovy paste ( I used homemade bacon bits and capers) and Worcestershire sauce. Whip that up in the bowl then add romaine. Toss it around and then shred your Parm on top. Add croutons when ready to serve.
The croutons pictured here are home made too. Why bother you ask? Simple. I tried to make french bread and it was not that great. So I diced it up. I added butter, olive oil, parm cheese, parsley and fresh garlic. Salt and pepper to taste. Roast in oven until lightly browned. Store in a dry place.
To sum it up, fresh is best. You can add eggs or chicken to your caesar for more protein. Do not skimp on the PARM🤗🥬🍋🧄🥖🧀🥗
Add what ever you have on hand and keep it simple.
