The most important players in the fishing industry say they are ready to transform more lobster and adapt to record landings. They are gathered all week in Quebec City for the 47th symposium of the Quebec Association of the Fishing Industry.
And excellent seasons are still to be expected with a resource that is abundant and healthy in all regions of Quebec Maritime and in Anticosti, where the processing of catches, transported and processed in the Gaspé Peninsula, does not fall.

To meet this request, Unipêche MDM has invested, with the help of the Government of Quebec, more than $24 million in its seven factories, including Cusimer in Mont-Louis and the Poseidon plant in Longue-Pointe-de-Mingan, to accelerate the production rate and process more lobster.
Only for the Mont-Louis plant, this is an investment of nearly $8 million. Despite problems with the running-in of its ponds last summer, which forced it to throw away lobster, the plant will be positioned in particular to transform the additional landings generated by the exploratory permits.
Due to the crisis in the shrimp industry, E. Gagnon et fils will also transform more lobster next spring at its Marinard factory in Rivière-au-Renard, after an investment of one million dollars.
Tests were carried out in 2025 with the processing of small quantities, but the factory takes the tangent of the multispecies, with lobster processed in spring and local shrimp, in late summer and autumn.
The reason: its Sainte-Thérèse-de-Gaspé plant and its pools are saturated and can no longer meet an additional demand.
We have tried for the last two seasons by transforming Scandinavian shrimp, especially from Norway. It was not a great success and here, we have employees to qualify for employment insurance and a factory to keep alive. And the resource that is increasingly being landed at the Rivière-au-Renard quay is the lobster.
Smaller players, such as Menu-Mer in Rivière-au-Renard, also act as lobster buyers when the food pools of the processing plants overflow and have reached their full capacity.
The company buys and distributes several species such as halibutan, but also lobster.
We do business with all the factories of the Gaspé Peninsula. Often, it helps them. It allows you to sell stocks, it's a win-win, explains its general manager, Stéphane Morissette.
The company has invested in equipment to transform the lobster, but does not intend to go further by having a direct purchase permit from the fishermen.
The bulk of the lobster that we treat, it is alive, but we installed, two years ago, a small cooking line that allows us to transform a little and we do a lot of portioning for restaurants that do not necessarily want large quantities, adds Mr. Morissette.
The pressure on fishing could be greater with the addition of exploratory permits as early as 2026.
