One-Pot Tomato & Chickpea Stew recipe from is a winner 🌟 My adaptation included double the olives and chili pepper then served with cream of mushroom mashed potatoes … incredible IMHO 😏

Post-ride lunch was goooood! Chopped salad of romaine lettuce, celery, carrot, smoked gouda and a poached egg topped with a bit of red wine vinegar, olive oil and salt & pepper… sided with a freshly made Manakish - pita style dough baked with an olive oil and za’atar herb blend… and of course I added some cayenne for some heat!

Consistently checking in with myself and Spirit has been a game changer recently. I'm not a fan of doing the same practice every.single.day ... so here are three of my current favourite ways I have found that work for me to check in and/or seek guidance from within and Spirit:
- Guided morning meditation (currently loving Morning Meditation to set my mind and energy in the direction I want to go)
- Before leaving the house, taking a breath and saying out loud "Thank you" and feeling so much gratitude for everything I see in my space
- Mindful walking with no music/audiobook/etc. but rather being fully present and grateful for the ability to walk, breath and see all that is around me
